Fish are not as dumb as it is thought. All that stuff about "what castle?" and a two second memory is rubbish. There have been several well recorded incidents where fish have developed trust and fondness for humans particularly in the case of wolf eels and divers. Famous free diver Tanya Streeter regularly visits a conga eel that appears to recognise and trust her. Your fish probably already knows that you love it as you have been feeding and caring for it.

I wouldn't get my hopes up; fish are pretty much little automated swimming, mating, and eating machines. That's just about all they are capable of handling in their little fishy brains.
If you want a small pet that has a pretty good brain, go for a bird! For their size, they have a LOT of brain power. Meanwhile, enjoy your fish, and don't worry too much about it - it doesn't have many cares, and there are certainly worse ways to live :-)

Even if he doesn't, you know you do. I used to talk to my fish all the time, they were part of the family, I learnt that they all had their own characters. Anything living can be talked to whether it understands you or not.

Yes, just don't take him out of the tank and kiss him. He feels the thoughts go from your head to his. It is ok to put your face up to the glass and make eye contact with him when you tell him you love him.
