I've had UC for 1.5 years and have cut out all dairy, fried foods, raw veggies, hummus and real spicy foods, I have notice a lot of difference but I still have flare ups. I seem to get flare ups due to stress and my emotional state. I take Colazal but it doesn't really seem to get it completely under control. I am lucky though in that I don't have any pain with my UC and it is a really mild case. I do drink 6-8 oz aloe vera juice a day and take pro-biotics.

I don't have UC, but I have a tricky digestive tract that doesn't like a lot of stuff. I have much less trouble with it when I avoid dairy products too. I do best on no dairy products, no beef, no chicken, and very little grease. That list would probably include pork if I ate it, but as I don't like it and don't eat it, I can't really say. Fish and shellfish seem a lot more digestible than other forms of meat. Among the starches, corn is a troublemaker and very indigestible. Lentils, chickpeas, and white navy beans seem to be the most digestible and trouble-free legumes.
It will be worth your while to experiment with your diet and get closely attuned to your tolerances and intolerances. You are on the right track. Best of luck.

Dairy products also bothers me. You should see your doctor and have an allergy test. You may be allergic to certain things that are doing this. Gravies are another thing. Spicy foods. Mexican foods. Stay with bland foods for awhile, stick with Jellos and things like this for awhile until your bowl straightens out. Take Metamucil twice a day and see if a lot of fresh vegetables help. Don't overdo it.
Stay away from fried foods, steam your foods if possible. Don't let yourself go to long without going poop. Take something. Good luck.

My son has UC. He was diagnosed when he was 3. He is now 5. His doctor has told us time and time again that we should not limit his food. We haven't had any medicine work for him either. We have one more medicine and if that doesn't work we have to have his colon removed. My mom has UC and she controls her UC with diet. She was diagnosed when she was 30 and is now 50. I think that for everyone it is different but I definitely think that it can be controlled with diet but you have to find out what you can and can't eat. I think the reason my son's doctor has told us not to adjust his diet is because he is so young they don't want to hinder his growth. Good luck and I feel for you.

You can also exclude bowel stimulating foods such as nuts, prunes etc. These just irritate the bowel more.
