As soon as you can get away, do so. Use a tree to cut down the angles an attacker can get you. (In the movie "Dragon," Bruce Lee made it appear like he was chickening out to get out of the center of a group of people in the gym) Keep your eyes from focusing on any one opponent. Kick knees, run. repeat as necessary.

It depends on where you are at ( I assume you are not at home) and the resolve of your attackers. If you can get away, run. If you must make a stand - attack the leader with everything you have: punches, kicks, rocks, sticks, etc. Take the fight to them and you have the best chance. NEVER cower and wimper- it will get you killed. The Steven Seagal whipping 6 guys is bullshit. Don't think you can stand and beat them all even if you are a black-belt or a boxer ( you should know better). AVOID SITUATIONS LIKE THAT !!!!!
PERSONAL NOTE: I can handle myself pretty well. I am schooled in boxing and karate and growing up in LA street fighting. I have a carry permit for a firearm, but I never allow myself to get into situations where I ever have to pull it.

What I tell my students is to:
1) Size up your opponents and pick the weakest link
2) While doing this, point them all out and ask who wants to die with you (this makes most think about what they heck they're doing)
3) Bum-rush and maul the weakest link and keep running until you are safe
This tactic should work for just about any amount of attackers, unless you're in a situation like in Matrix where you have VERY limited escape options. Then, you just take them on one at a time and pray you survive.

Pray they decide not to kill you.
If they all attack you at once, you are going to get hit. There is no getting out of it. You will probably get hurt badly. The question is whether you are alive at the end of the fight or not.
The smart thing to do would be to run away. When the fastest guy catches up, turn and fight him....then run again until the next guy catches you.....repeat.
Barring that, try to use them against each other. Block and push/throw one attacker into another attacker and that sort of thing.

Take out the lead opponent, step away to the right,(since most opponents are right handed), set up the next opponent, and feel your area around you,(we're talking in split seconds, hence it's mostly react, not PONDER over it, this why you train, train, train!). Use the opponents against each other.

Fighting multi attackers is all about zoning. Zoning is positioning yourself and using your attackers against themselves. I first learned the concept in Escrima/Kali but my most influence came from Aikido.

What Shienara said times ten!!!
However, if you can't get away do what the others have said: but have the mindset that yes; you are going to be beaten to a pulp, but do as much damage as you can while you can.
