I have a rather stupid argument going on that I'd like to end once and for all. How do you pronounce 'Carlotta' in Spanish? I say just as it's spelled, the other person says you roll the 'R.' I was taught that only the double 'R' is rolled. A native speaker would be great, so then this stupidity can end.

There are different accents and the rule may not apply to all of them but, in general, the "R" can be rolled also at the beginning of a word -as in "radio" and before another consonant -as in "Carlota"-
(by the way, Carlota is normally written in Spanish with one 'T' only, except in cases when the person wants her own spelling).

When Speaking fast, the 'R' before a consonant may sound a little softer. But it's certainly rolled.

Carne - arma - borde - verde.

There are accents when it may sound almost like "RS". (In some parts of Argentina and Maybe Chile and also in Bogotá and other parts of Colombia)

It will depend on you. If you might have difficult time announcing them then you'll be able to most effective say it like you'll be able to. You'd have to listen me say Carlotta for to know how pronuce it.
It's difficult but the learning of another language always is harder.

My native language is Spanish.

You are right you roll the "r" only when you find a double "r", or if a word starts with "r".

In the other cases you hardly notice it, as there is no need to exagerate either.

So, it is

Car (as in car)

You only roll a double R or an R at the beginning of a word, as in "Roberto".

its pronounced with a double R ... well I do it ...

not everyone pronounced the same way ... theres difference of region ...
