1. you are normally hired for a specific prison,

2. there are some jobs that are not with inmates all day, and places where officers step out away from inmates, but most of these are rotated, and you will do many jobs, and you will be working with inmates if you work in a prison.

And you do get time off, if it is important, you would need to tell them on day one, if you are going to need off.

Based on your questions, you may not be exactly what the Dept of Corrections is looking for...
A CO should be willing to take any post in any prison at any time - that is what you are trained for, and that is what your employer expects. There are NO safe prisons, in California or anywhere. Prisons are where the dangerous people LIVE. You go to THEIR HOME every day, and you wear a uniform that they ABSOLUTELY ABHOR AND DETEST. You are the enemy, and they want you dead.
If you can't deal with that, please look for another kind of work - I don't want my life to depend on you.

I would imagine that your choice of where to work would be limited. You may ba able to choose where you would like to go, but they will probably put you where you are needed most. That is how it works in Michigan. You must be prepared to move where they want you.

Exercises: running, push-ups (lots of em), defensive tactics.

Positions... limited inmate contact is almost impossible if you are just starting out. Crews may rotate during a shift or they may not. Depends on the facility.

Hope this helps. :)
