I will be driving (non-stop besides getting gas) two states over and I really don't want to stop at fast food places to eat as I'm trying to watch my weight and we all know during such traveling trips people tend to forget they're on a diet and pig out. Is there anything I can make beforehand that will be both healthy and yummy to eat?

Stock a cooler with fresh fruit precut in containers, some cheeses and crackers, low cal pasta salad, olives, maybe some cubed or shaved lunch meats like lean turkey,and ham. Put in lots of water and diet drinks. Cut up veggies and a low cal dip work great too. throw a baggie with a couple of different breads that you like or a roll or two and use individual condiment packages. That way you can just munch or you can stop and make a sandwich.
Other options are to put a premade green salad in a bag and add dressing later.. leave the tomato out until you serve too. It will also be alot cheaper than fast food.

What I always say I am going to do, and then end up at McDs is

Every town has a grocery store
Go the the deli department and put a nice meal together from the deli ...or salad...or
whatever department looks healthy and good.

For pre planning

apples, bananas, Kashi bars, nuts,
bottles of water, hard boiled eggs (don't forget the salt),
If you want to cheat a bit and are taking a cooler.
Bagles, salmon, cream cheese, red onion,

or
Egg salad or tuna sandwiches.

Cucumber sandwiches.

Get a thermos and take soup.

bring a cooler
diet sodas
carrots, celery, green peppers etc already cut up in the cooler
where you can reach it.
fresh fruit, apples, oranges, pears, cherries, etc.
bring it all with you.
maybe some jerky if you need meat.
