First it depends if you are talking about many or just one, if there are many it would be "Tienen piel gris o café, también tienen pezuñas negras y son bajos"
If you refer to only one animal "Tiene la piel gris o café, también tiene pezuñas negras y es bajo"

When talking about more than one person, "ellos or ellas", you have to use tienen which means they have when you used tiene you said he or she has. Also you need to use bajos because you're talking about more than one person.
