Velveeta Cheese Sauce for Cauliflower and Broccoli
Cauliflower and broccoli never had it so good...this cheese sauce is AWESOME!!! The amounts stated makes a huge amount of cheese sauce, if desired the ingredients may be sucessfully cut in half for a smaller amount. For cheese sauce with a kick, add in some cayenne pepper. Of coarse this cheese sauce can be used for other veggies or for just about anything!
4 cups 20 min 15 min prep
2 tablespoons butter or margarine
2 tablespoons flour
2 cups half-and-half cream or 18% table cream
3 cups cubed Velveeta cheese (cubed about 1 inch)
1/4 teaspoon salt (or to taste)
black pepper (or to taste) (optional)
1 teaspoon sugar
paprika, for topping
Melt the butter in a small saucepan; remove from heat.
Blend in the flour until smooth using a wire whisk.
Return to heat; gradually whisk in the half and half cream; bring to a light boil, keep whisking until the mixture is smooth.
Add in the cubed Velveeta, and contine to mix with a spoon until cheese is melted.
Remove from heat.
Add in the sugar, salt and pepper; mix until combined.
Pour over the veggies JUST prior to serving.
Sprinkle with paprika.

BROCCOLI WITH CHEESE
2 pkg. frozen broccoli
1/4 c. butter
1/4 c. flour
1/2 tsp. salt
1/4 c. chopped onion or 1 tbsp. dried onion
2 c. milk
1/2 lb. cubed Velveeta cheese
TOPPING:
1 stick butter
2 pkg. crushed soda crackers
Cook 2 packages broccoli as directed on package. Place in 9 x 13 inch pan. Prepare sauce using remainder of ingredients except for crackers and 1 stick butter. Make as for a white sauce. Pour sauce over top of broccoli then top with topping. Bake 30 minutes at 350 degrees.

This is what I do and it works great.
I use whatever amount of frozen broccoli you want to use, put in a dish that has a cover and put enough slices of American Cheese to cover the top of the broccoli and a little butter or margarine and salt and pepper on it. .
Cook it about 3-4 minutes depending on your microwave. If you don't have a covered dish, either put a plate on top of your bowl, or use plastic wrap on it. Comes out with a great tasting cheese sauce on it. You can also do this with cauliflower or brussel sprouts if you like them.
Tastes like it was work, but it's so easy!

BACK AWAY FROM THE VELVEETA!!
in a sause pan on low/med heat about a cup of milk. Slowly add grated aged cheddar or what ever cheese you prefer about a cup or so until it gets to the desired thickness. add salt and pepper to taste.
Or use a can of Campbell cheese soup.

the best thing to use is cheese soup in the soup isle,,. and pour over broccoli,crush cracker crumbs , about one cup mixed with four tablespoons of melted butter. sprinkle on top and bake about twenty min, use frozen or fresh brocolli, you can also fix the same way but add rice,

Instead of a sauce, just sprinkle some fresh grated parmesan cheese over the steamed veggies and add a little garlic powder to whatever spices you planned on putting with it.

simple cheese sauce
INGREDIENTS
2 1/2 cups milk, divided
2 tablespoons cornstarch
2 cups shredded Colby longhorn cheese
1/2 teaspoon garlic salt
1/8 teaspoon ground red pepper
4 drops yellow food coloring
DIRECTIONS
In a small bowl combine 1/2 cup milk with cornstarch; mix well and set aside.
In a medium saucepan over low heat, combine cheese with 2 cups milk and melt. Stir in garlic salt, red pepper and food coloring. To the melted cheese add the cornstarch mixture and stir well.
