Boil your broccoli dont get it all the way done..Then put it in a baking dish..Add salt pepper alittle milk and Velvetta cheese and when its boiling then add Cracker crumbs or bread crumbs or frenchs onion that you use in green bean cassarole over the top and cook for a few more mintues..YUMMY..DISH..

Broccoli is pretty versatile. Instead of boiling it in water over high heat like dear old mom used to, try putting it in a steamer basket and steaming it until its just tender and not yet turning that dark putrid-looking green color.
Remove it from heat and melt a little velveeta cheese over it. and its wonderful on its own.
There's a delicious casserole you can make with chopped broccoli. You need 2 cups rice, 1 cup chopped, steamed broccoli, a can of cream of chicken soup, and a small bottle of cheese whiz. Mix this all together and bake it until it is crusty and melty. We serve this dish at holidays, but its good any time you need a veggie side dish.

Broccoli Pasta Salad
Boil noodles of your choice.
While noodles are boiling chop up the broccoli.
Add the broccoli to the noodles.
When the noodles are done, drain all in a colander.
Mix noodles and broccoli with a little italian dressing (just enough to lightly coat) and parmesan cheese.
The carbs will give you energy when you need it and the broccoli will meet your veggie requirement.

2 Tbsp. balsamic vinegar
1 cup mayonnaise
2 Tbsp. sugar
5 cups fresh broccoli florets
1 cup grapes
2 cups cheddar cheese
1 cup sunflower seeds
Directions
Combine first 4 ingredients; let sit 30 minutes. Mix together with remaining ingredients. Chill about 1 hour. Makes 4-6 servings.

I have two ways...
Steam it, but use a vinagrette, like balsamic, red wine or rice mixed in with the water and a bit of sea salt. Crumble feta cheese (or any kind of cheese) over it. Add some cold carrot shreds to the top to sweeten the tarter taste.
Second, try it as a salad. Mix a dressing with mayonnaise, cream and sugar with broccoli, add bacon crumbles, cheddar cheese, sunflower seeds and/or raisins. I love this salad in the summer.

My dad used to throw a bunch of broccoli in a casserole dish, squirt some lemon juice over the top of it...sprinkle some garlic salt & a little garlic powder on top...then add a couple tbsp's of butter...toss it; cover it and microwave for a minute or two...toss again and voila!! It was WICKED good!

Broccoli cassorole! 11lb. brick of vellveta cheese 1box(4tubes) of ritz crackers 1stick of butter 1 10-16oz of frozen broccoli crumble all crackers in large bowl, melt butter then mix butter with crackers, put half of cracker mixture in 13 by 9 baking dish(press into bottom), cut cheese(lol) into cubes mix cheese and broccoli, put mix into 13 by 9 dish and top with rest of crackers! Bake at 375*-400* for 25minutes or bubbly! It's good and kids will love!
