Well for big Flathead catfish use live bluegill the size of your hand, They work great I caught a 64 pounder off live bluegill.
For Blue cats or Channels use shad ,cut bluegill or shiners . I have caught several large cats off them .
Chicken livers and nightcrawlers catch catfish but usually small ones.
I have used fresh shrimp with great sucess for large blues and channels
Keep all bait fresh and cold , catfish dont like rotten fish near as well as fresh caught ones

well it depends on what type of catfish really. some prefer live bait while others the more rotten the better. i have used pepperoni, shrimp, cut fish, fish gut, minnows and worms.
I went a couple weeks ago and was using pepperoni, non stop action until the wind started blowing hard. in 2 hours i had 25 bullheads all in the 2-3 lbs range. here is a list of catfish and what they like.
channel cats- liver, minnows, worms, and even rotten cheese
flatheads- they prefer any fish that is alive or fresh they tend to get very large so use a minnow or bait fish that is at least 4 inches long.
blue catfish will eat anything but prefer shad. they also get very large.
and of course the bullheads will eat anything.
not knowing what state you are in some of these may not be in your state.channel cats and bullheads are the most widespread. while blues are mainly in the south and flatheads are usually from parts of va and south carolina over to the lower part of north dakota and as far west as new mexico.
due to the sporting value and table quality alot of these have been stoked in rivers, ponds and lakes, so no telling what you will catch. One thing is for sure a fresh cut fish,or large gobs of nightcrawlers are you best bet.
what i have done in the past was have several rods set up with different baits to see what i get the most hits on then go from there.

I really like live creek chub minnows or night crawlers. the minnows are usually hooked through the mouth. not the back. ive caught many 30 inch catffish on these. livers, and crawfish never really caught much. i noticed i "outfished" the people who used them. crawfish only caught me snags. all the packaged bait is a joke. i HAVE NEVER caught one fish on it yet. i fish right along the side on a dam and i catch 10-15 fish in the 20-30inch range on minnows and worms in about 2 hrs. thats not much since i also catch walleye, drum, carp, and bass on them too, especially the minnows(usually about 2 of each of those)
GOOD LUCK AND TIGHT LINES!!!!!!!

Well ive been fishin for a long time now and i like to use a big chunk of blood bait. Dont use a bobber and cast it out and just let the bait lay on the ground. make sure to keep a tight line and get ready to reel in the big one.

Wellllll, way back yonder in Lerweezee-anna, them good ol' boy's would just wonder down to the ol' fission pond, wade on in, the find a log that's stickin outta dat dere pond. Sure nuff, all day'd hav ta doo, is reach on down.....and kinda fiddle round under dat dere log, till one O dem big ol' Mudsuckers would take a bite outta dere' arm. Swallow it up whole, all da way down to da elbow. Yep. And dems good eattin!!!!
But seroiusly....catfish are bottom feeders, and not to particular on what they feed on, so any of the above will work "Gee-ust fine!!!".
And on another note, people really do catch catfish the way I decribed. I believe they call it mudslinging. Look it up. I'm sure you can find some hilarious videos of it.

Best bait would be a hand crank telephone, or an M-80, or something bigger, like maybe a stick of dynamite.
