Because when you eat cheese cold, it has a texture sort alike rubber. You chew it, and swallow without it touching too much of your taste buds on your tongue. But when you melt cheese, and eat it, it then covers not just your tongue, but your cheeks...It melts all through your mouth. So...Which means, when you melt cheese, it enhances the flavor of the cheese, and thats why you like it better:) ( Melted)?

Probably because the texture changes, and it gets warmer. I also love melted cheese.

when its melted or room temperature, the fat in the cheese turns to liquid, which means it's easier for the flavors to explode in your mouth
If you leave a piece of cheese out at room temperature for about 20 minutes you'll notice it.
