The white part was semi-soft and very creamy. Whenever I think I've found them, it turns out to be something else altogether. I'd walk a mile to buy some.

sounds like pecan divinity. The ones with cherries are good too.

here's a recipe, just in case you want to make it.

Pecan Divinity

Red Creek Inn Vineyard and Racing Stable, Long Beach, Mississippi

List of Ingredients



3 cups sugar
1/2 cup light Karo syrup
3/4 cup water
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/4 cup egg whites
1 cup pecan pieces


Recipe


In a saucepan combine the sugar, Karo, and water. Cook over low heat, stirring until dissolved.

Increase the heat until the mixture boils, then cover the boiling mixture, without stirring, for 3 minutes.

Cook evenly until the temperature of the mixture is 265 degrees or firms up. In a bowl combine the salt, vanilla, and egg whites, whipping until stiff.

Slowly pour this mixture into the hot syrup. Continue cooking until the mixture will almost hold its shape, then stir in the pecan pieces.

Drop the divinity by tesaspoons onto waxed paper and cool at room temperature until set.

YIELD: 30

you can use half pecans on top instead of pieces inside. Or both if you like.

IT had an anise seed for a center but was not creamy as I remember,..??
