Asian Aura Beef & Broccoli Stir-fry
Ingredients
1/2 cup Asian Aura Dressing™
1 tsp. Fiesta Party Dip Mix™
1 Tbsp. olive oil
1 lb. thinly sliced sirloin steak
1 tsp. Garlic Garlic™
3-4 cups fresh broccoli florets
Prepared hot white rice
2-3 sliced green onions
Directions
Combine first 2 ingredients; set aside. Heat olive oil in large skillet or wok; add sliced steak and Garlic Garlic™. Saute for 2-3 minutes or until no longer pink. Add broccoli to skillet; saute 2-3 minutes or until crisp-tender. Stir in Asian Aura Dressing™; heat through. Serve over hot rice; garnish with green onions. Makes 3-4 servings.

I like to roast broccoli in the oven and it comes out crispy. Preheat your oven to 425 degrees. Place your cut broccoli on baking sheets. Drizzle olive oil over the broccoli, sprinkle with salt, pepper, red pepper flakes, and chopped garlic over the broccoli. Stir to combine. Place in your oven and bake for 20-25 minutes depending on the size of the florets. The broccoli comes out crispy and nothing like boiled or steamed broccoli. It's great.

If you like soups, use the veggies you don't use to make a nice vegetable broth. Simply put the vegetables in a pot and add water to a depth of one inch above the vegetables. Cook for 1 hour, then strain and add seasonings like a bit of salt, pepper or whatever strikes your fancy. You can then use the broth as a base for homemade soups or gravies.
You could also simply freeze the broccolli you don't use. Just put it in an airtight freezer container or freezer bag.

make a broccoli rice casserole...
cook about 2 cups of rice, then take about 4 oz of velveta cheese and mix it into the rice while its hot. chop up the broccoli into small pieces and mix into the rice. add about half a can of cream of mushroom soup into the mix. place into a casserole dish and bake on about 350 degrees for around 45 minutes.

Creamy Shell Pasta Salad
INGREDIENTS
1/2 cup small uncooked seashell pasta
1/4 cup and 2 tablespoons fresh broccoli florets
1/2 small carrot, thinly sliced
2 tablespoons and 2 teaspoons cubed American cheese
2 tablespoons chopped cucumber
2 tablespoons diced celery
2 tablespoons sunflower kernels
1/2 hard-cooked egg, peeled and chopped
DRESSING:
1/4 cup mayonnaise
2 tablespoons prepared Ranch salad dressing
1 tablespoon and 1-1/2 teaspoons milk
1 tablespoon red wine vinegar
1-1/2 teaspoons dried minced onion
1/4 teaspoon seasoned salt
1/8 teaspoon garlic powder
1/8 teaspoon dried parsley flakes
1/8 teaspoon pepper
1/8 teaspoon prepared mustard
DIRECTIONS
Cook pasta according to package directions; drain and rinse in cold water. In a large bowl, combine the pasta, broccoli, carrot, cheese, cucumber, celery, sunflower kernels and egg. In a small bowl, combine the dressing ingredients. Pour over salad and toss to coat. Serve immediately.
