I'm mostly interested in 32-bit & 64-bit versions of Linux to run Maple onto. However, I'd like to know if I get any benefits in speed (and how big?) from the 64-bit architecture before I decide to actually buy the program.

64 bit software on a 64 bit OS will always yield better performance, due to the way it can address the memory space better, but really its down to the programming people, if they are clever, they can really make a huge difference, even if not, you should still benefit.
