CRISP HEALTHY COOKIES

1 c. shortening
1 c. white sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
2 tsp. soda
2 c. Corn Flakes
2 c. raw oatmeal
1 c. nuts
1 c. coconut

Cream shortening and sugars. Add eggs and vanilla. Add flour, salt, baking powder and soda. Mix and add corn flakes and oatmeal, then nuts and coconut. Roll into small balls and bake at 350 degrees for about 15 minutes.

Whole Wheat Peanut Butter Brownies

INGREDIENTS

1/4 cup margarine, softened
1/2 cup white sugar
1/4 cup and 2 tablespoons packed brown sugar
1-1/2 eggs
3/4 cup peanut butter
1/2 teaspoon vanilla extract
1 tablespoon and 1-1/2 teaspoons water
1/2 cup and 1 tablespoon whole wheat flour
3 tablespoons all-purpose flour
1/8 teaspoon salt
3/4 teaspoon baking powder
1/4 teaspoon baking soda

DIRECTIONS

Preheat oven to 350 degrees F (175 degrees Celsius). Grease a 9x9 inch baking pan.
In a large mixing bowl, beat together margarine and sugars; add eggs one at a time, and beat until mixture is light and fluffy. Stir in peanut butter, vanilla, and water.
In a separate mixing bowl, mix together flours with salt, baking powder, and baking soda. Stir into peanut butter mixture and blend well. Spread batter into the prepared pan.
Bake in preheated oven for 30 to 35 minutes, or until the top springs back when touched. Cool and cut into 16 squares.

the best is the one on the nestles box- you can substitue dark chocolate for the milk chocolate and apple sauce for the sugar
