I thought about a rice salad of some kind, but my problem is, I'm having guests over tomorrow night and roast chicken and vege are already on the menu.

I'm concerned about how long I can keep the rice and how to store it as I have heard that cooked rice can pose a salmonella risk.

Would I make up a salad tonight (and then there is the problem of how to do that, or what to do) and store the rice for the two days in the fridge (obviously clingfilmed/gladwrapped) or do I leave the rice then make a salad on the day I am using it.

Are there any other ways to used cooked rice? Perhaps a rice pudding to go with tomorrow's roast? How would I go about that?

I really don't know what to do with all this left over cooked rice or how to store it properly or if it's safe to store in the fridge for a few days, any advice, recipes, suggestions or ideas would be greatly appreciated.

Cooked rice can be dangerous if not refrigerated properly. Which you'll be doing. (Bacillus cereus is the food borne problem.) I've refrigerated cooked basmati many times, usually in the pot with a lid on it. You can either fridge it plain, or make the salad, either will be fine tomorrow for dinner plans. In fact making the rice salad today would make it taste even better tomorrow.

Or make stir fry. Cold rice is perfect for that.

Make garlic rice or fried rice

Garlic rice is made by putting olive on the bottom of a frying pan (big enough to hold the rice) heat it up, and then used 6 to 7 cloves of garlic minced and sautee it and then put the rice is and break up the rice with a wooden spoon. Then put garlic powder (3tablespoons or so or you can use less) on top of the rice with salt and pepper and mix it all together and keep breaking the rice and turning the rice in the pan. It real good!

Basmati (Not Basanti)

Make a rice salad:
Ordinary salad dressing from a bottle on top of cooked rice. Mix. Because the dressing has vinegar and oil and salt in it, all of these will help to preserve the rice longer)
Add to this mix, chopped this and that to your liking. (Pine nuts, olives, capers, anchovies, shrimp, cooked veggies, chopped garlic, herbs, etc)
Taste for completeness the next morning and adjust as needed.
Rice pudding is not easy for a beginner cook...

Why don't you make a soup. Tonight I'm making tiny meatballs cooked in a tomato/ chicken broth with rice and fresh herbs.

i wouldn't store it or eat it because once heated if you leave rice or store it, rice is known for attracting lots of germs that could lead to food poisining.
so your best bet is to chuck it away

Fry it with sesame oil and some chicken broth and maybe some vegetables.
