Yes, it depends upon (1) whether the honey is colored or flavored, (as many have discussed before) AND (2) the "source" of the honey. Many gourmet apiaries are arranged so that the bees gather nectar for honey production from only one single source at a time -- one particular flower, tree, or nectar. The color, smell, taste, and texture of the honey will therefore largely depend upon that single source -- it can be very dark or very light.

Yes it does, it depends on the color of the flowers that the hive has been feeding on. There is many different shades of honey.

Yes, Wild Honey is so dark it's almost black. It's made from bees outside being they are wild and in the woods or fields.
