I use just regular potatoes, enough for the amount of people I am serving (there aren't any specific portions, it is all by taste and experience)
I wash the potatoes, then cut them into bite sized pieces, leaving the skin on. I cook them by boiling them in water with a little bit of salt, until pretty much soft.
I often add cut asparagus, cooked only until they turn a bright green and are still a bit crunchy.
I also will add either uncooked, sliced or shredded carrots.
Celery is a staple in my potato salad.
I will sometimes add a small about on finely chopped onion, and sometimes finely chopped red and green sweet bell peppers.
I put everything into a large bowl and season it all with a bit of salt, pepper, dill weed, onion and garlic powder (just a wee bit). I mix that together and then add the mayonnaise and mix that all together. I will also sometimes add either red, white or balsamic vinegar.
It is a very loose recipe, and almost anything goes. I will also sometimes add either prepared mustard or ground mustard seed, and sometimes a bit of ground cumin.

I do, but it's not a recipe as I just go by feel, I just make it! A good thing to do is use the yolk of hard boiled eggs to mix in with the sauce. I also use a little ranch dressing with the mayonnaise and a little pickle juice and a couple of hot peppers (shopped fine) for a little zing. Be very careful that you don't boil the potatoes to long or you will end up with mush.
