A wiring harness on a car is a bundle of wiring, such as the wires that run to the connector on your car radio/CD.
Some companies sell harnesses that match that connector and you wire the harness to a new radio/CD. This makes installation easier and you don't screw up your car's original wiring.

That metal plate is just called a mounting plate..

The metal plate is usually called a "mounting can" or "mounting sleeve". It comes with the new radio and it's used to secure the radio into the kit or dash opening.

A wire harness is an adapter that fits the factory radio plug, and has color-coded wires. It allows you to easily connect your new head unit to the factory speaker and power wiring, without having to cut wires or guess factory wire colors. A mounting kit is usually plastic, and it's used when the factory radio is a larger size than the new replacement radio. The mounting kit matches the factory radio size and mounts, so it gets installed into the dash opening. Then the new radio gets secured into the mounting kit. I thought a wiring harness was a harness of electrical wiring that is made on a special board and fitted into various vehicles etc.
could be different for radios

no that is called an instalation kit. the wiring harness is what connects to your exsisting radio plug in your car when you disconect the factory radio
