is it true that once you cook spinach, you cant reheat it? why?

You can reheat spinach as many times as you want but it does lose some of its nutritional value each time.

This is true to a degree, spinach is rich in nitrates, once cooked and left to it's own, certain bacteria feed on the nitrates and convert them into nitrites. The 2nd reheating can speed up the bacteria with a warmer more favorable enviroment. The bacteria themselves which may be killed eventually with sufficient heat aren't the danger, but rather the nitrites they already produced. Nitrites are most harmful for young children and the eldery, in small quantities consumption of nitrites is ok for older children and adults, though larger quantities will be toxic.

You can reheat the spinach but it will lose nutritional value each time it is heated. Just becareful not to overheat it.

never heard of this.... waht do you do if you make too much? Throw it out? Of course you can heat it back up.
