EASY ITALIAN MEATLOAF

2 1/2 lbs ground beef or chuck
2 large peppers, red or green, coarsely chopped
1 16 oz can diced tomatoes
1 large sweet onion, chopped
4 slices bacon
1 1/2 cups Italian breadcrumbs
1/4 cup grated Parmesan cheese
2 tablespoons minced or pressed garlic
1/2 teaspoon basil
1/3 teaspoon oregano
1/3 cup chopped fresh parsley (do not substitute)
1 teaspoon seasoned salt or beef bouillon powder
2 eggs
1/3 teaspoon ground black pepper
1/3 cup ketchup (or more as needed)
onion and garlic powder to taste

Preheat oven to 375°F.
In a large bowl, combine meat, eggs, seasonings and remaining ingredients except ketchup and bacon, adding breadcrumbs to mixture last. If meat is low in fat, add up to 1 tablespoon olive oil. Mix well.

Press meat into a loaf shaped pan, forming a dome shape. Brush top with ketchup and sprinkle with onion and garlic powder, salt and pepper. Cover with bacon slices. Baste occasionally with additional ketchup during cooking, being careful not to allow oven to get cold or additional cooking time will be required. If desired, cover with thinly sliced onions.

Bake uncovered 1 1/2 hours.

EASY VEGGIE SOUP

2 large cans chicken broth
1 head shredded cabbage
2 stalks celery, sliced
3 carrots, sliced
1 onion, sliced
1 tomato, diced
1/3 can tomato paste
garlic powder, oregano, basil, pepper to taste

Combine all ingredients in a large pot. Bring to a boil, then simmer for about 3-4 hours.
Easy to freeze and thaw for cold winter days. It's also very healthy for you!

STUFFED MUSHROOMS WITH SPINACH (EASY!)

2 pkg. of button mushrooms
1 pkg. Stoeffers frozen spinach souffle
Parmesan cheese

Clean mushrooms, barely defrost the souffle and spoon into mushrooms buttons. Top with Parmesan Cheese.
Bake for 20 minutes until bubbly!

EASY STUFFED PEPPERS

4 bell peppers (any color)
1 box Rice-a-Roni, garden vegetable flavor
1 lb. hamburger
1 14 oz. can diced tomatoes

1. Prepare the Rice-a-Roni according to box directions.
2. Cook hamburger

3. Mix cooked hamburger with can of diced tomatoes and the cooked Rice-a-Roni.

4. Cut the tops off the bell peppers, and clean seeds and ribs from the insides.

5. Spoon the rice mixture into the bell peppers

6. Put aluminium foil on a cookie sheet (for easy clean up) and place the stuffed peppers on the tray.

7. Bake at 370F for 20 min.

Salisbury Steak with Onion Gravy

1 egg
1 can (10-1/2 ounces) condensed French onion soup,
undiluted, divided
1/2 cup dry bread crumbs
1/4 teaspoon salt
Pinch pepper
1-1/2 pounds ground beef
1 tablespoon all-purpose flour
1/4 cup water
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon prepared mustard
6 cups hot cooked egg noodles
Chopped fresh parsley, optional

In a large bowl, beat the egg. Stir in 1/3 cup of soup, dry bread crumbs, salt and pepper. Crumble beef over mixture and mix gently. Shape into six oval patties. Brown in a skillet over medium heat for 3-4 minutes on each side. Remove and set aside; discard drippings.

In the same skillet, combine flour and water until smooth; add ketchup, Worcestershire sauce, mustard and remaining soup; bring to a boil. Cook and stir for 2 minutes.

Return patties to skillet. Cover and simmer for 15 minutes or until meat is no longer pink. Serve patties and gravy over noodles. Garnish with parsley if desired. Yield: 6 servings.

Well, the simple answer is to go to Boston Market and get a meal. Why are you cooking a dinner course if you don't cook? If you are trying to make a special effort for your mom, then take her out to eat. If you think you must cook, then look at heat and serve and do a nice arrangement on the plate.
And if you do get a recipe and decide to cook, practice the whole thing a week ahead and eat it yourself so you know what has to be done - otherwise the stress will be overwhelming.

Go to the foodtv.com and go to the Semi-Homemade Cooking with Sandra Lee. Her food is always delicious with very little work! I use her recipes all the time!

well, it would help to know which course you plan to make.
you could try getting a variety of good cheeses and deli meats, and then arranging it on a platter with good crackers and condiments, that needs no recipe and always is appreciated. or take a platter of a variety of fresh fruit chunks and add a small crock of cream cheese dip.

You should invest in a Turkey Fryer. Deep fried turkey is the shiznit.
