The sharks' digestion is too slow to cope with the human body's high ratio of bone to muscle and fat. The shark will generally leave once it realizes it has made a mistake. If swallowed, the remains are more likely to be regurrgitated that excreted.

A long time, sharks digestion is totally different than mammals, they can go weeks after eating something large. But their system does not deal well with human muscle and bone, which is why when a shark has actually eaten a human then caught the human parts are still in there undigested

Over all most sharks will regurgitate that which ti can't digest, most can actually turn their stomach inside out to clear it of undigested.stuff.

Another reason you often hear of Great whites biting once then leaving you alone, their mouth is so sensitive they know we aren't eatable the moment they bite down.

Hard to say. Sharks usually do not digest entire bodies.

Once they take a bite, realize you're no seal, and get punched in the nose and poked in the eyes by you, they generally let go.
