You could make spinach burgers just throw the finely chopped spinach in your meat mixture and form your patty then grill add toppings and enjoy.

Low Fat Spinach Lasagne
Ingredients

2 cups cottage cheese, 1% Milkfat (not packed)
1 large egg, or equiv egg substitute
2 cups mozzarella cheese, part skim milk
1 jar spaghetti/marinara sauce (tomato sauce)
1 pkg spinach, frozen (10 oz)
9 lasagna noodles
1 cup water
1/8 tsp black pepper
3/4 tsp oregano, ground

Directions
Preparation: In a large bowl mix thawed and drained spinach, cottage cheese, 1 cup mozzarella, egg and seasonings.
Spray cooking spray on a lasagna tray or 13x9x2 baking dish. Layer 1/2 cup sauce, 3 noodles and 1/2 cheese mixture. Repeat layer.
Top with remaining noodles then sauce and sprinkle with 1 cup of mozzarella.
You can also sprinkle grated parmesan cheese on top. Pour water around the edges and put a few toothpicks on top. This will prevent the cheese from sticking to the foil.
Cover with foil and bake at 350* for 1 hour to 1 hour 15 minutes, or until lasagna is bubbly.
Let stand for 15 minutes before serving.

Herbed Spinach And Rice Bake

Ingredients:
2 lb spinach leaves, fresh, well
4 tablespoon unsalted butter
1/3 cup onion; chopped
1/2 teaspoon salt
1 pinch sugar
3/4 cup milk
3 eggs; lightly beaten
1/2 teaspoon worcestershire sauce
1/2 teaspoon thyme leaves, fresh; or 1/4 tsp dried
1 cup rice; cooked
1 cup sharp cheddar cheese; grated

Instructions:
Preheat oven to 350°F. Be sure the spinach is well washed; shake dry. Heat the butter in a large skillet over medium heat. Add the onions and cook until slightly wilted, 3 to 4 mins. Add the spinach to the onions, sprinkle with the salt and sugar, and toss until the spinach is wilted, 3 to 4 mins. longer. 2. Transfer the spinach mixture to a colander or large sieve set over a bowl. Press, draining and reserving liquid. Add the milk, eggs, Worchestershire, and thyme to the spinach liquid, whisking to blend. Stir in the spinach, rice, and all but 2 Tbs of the cheese. Pour the mixture into a buttered shallow baking dish, such as an 11 x 7-inch rectangular dish, or a 9-inch round pan. Sprinkle with the remaining 2 Tbs of cheese. 3. Bake until mixture is set, 20 to 25 mins. Serve hot, cut into squares or wedges.

Spinach and Cheese Quiche
Pronounced: keesh / oh zeh pee nahrd

Pâte Brisée Recipe
INGREDIENTS:
1 pate brisee recipe (see link above) or refrigerated pie crust, baked blind (instructions below)
2 Tablespoons finely minced shallots
2 Tablespoons unsalted butter
1 10-oz. pkg, frozen spinach, cut into chunks (defrost slightly before slicing and cutting into 1/2-inch pieces)
salt, pepper, nutmeg
3 eggs
1-1/2 cups cream
1/4 cup grated Gruyère
1 Tablespoon unsalted butter, cut into pea-sized pieces
PREPARATION:
Preheat oven to 350F.
1. Line a 9-inch tart pan with a removable bottom with the pie crust. Line the inside of the crust with crumbled wax paper or parchment paper and fill with dried beans. Place in oven and bake about 12-15 minutes or until partially done. Remove the beans and the paper and bake an additional 2-3 minutes to dry out the bottom.

Heat to oven to 375F to bake the quiche.

2. Melt the butter in a saucepan. Add the shallots and cook for a minute.

3. Add the diced, frozen spinach and stir over moderate heat until the water has evaporated.

4. Season with salt, pepper and nutmeg.

5. Beat the eggs and cream together.

6. Stir the spinach into the eggs and cream and pour into the pastry shell.

7. Sprinkle with the cheese, dot with the cut-up butter. Bake for 25 to 30 minutes.
To serve:
Allow to cool for 5 minutes. Slice into wedges and serve. Bon Appetite

saute it with some garlic, olive oil and mushrooms and serve as a side dish, or mix in pasta.
I find that raw spinach only tastes great if its really fresh, so whether its about to expire or not, once its been in the fridge a few days, it's best cooked. It will last a few days longer after you have cooked it as well if you have leftovers.

You can even read other people's comments on how the recipe turned out for them. I definitely recommend it...it's saved me a few times! Happy eating!

A wonderful salad.

1 9-oz bag spinach leaves
1 pint strawberries, sliced
4 kiwi fruits, chopped

slivered almonds

Dressing:

1/4 cup veg. oil
2 Tbsp. raspberry vinegar
2 Tbsp raspberry OR strawberry reserves

Mix dressing and refrigerate for 15 minutes. Toss together with salad and serve. Garnish with almonds

In a frying pan heat 1 tablespoon olive oil. Sweat 1 clove garlic, chopped, do not let it brown. rinse spinach in colander, and add to pan still wet from rinsing it.
Stir for 1 to 2 minutes, till wilted. Add salt and a squeeze of lemon. Delicious !!

Honestly this spinach will still be good a year from now. Many food and drug producing company's use a expiration date on their product to sell more by scaring people to dispose of perfectly good food and drugs.

The date refers to when it has to leave the store or peak of freshness.

If it is fresh you probably have a few more days before it starts to get mushy and black spots.

If it's frozen, then you have several more months before it gets too much freezer burn, and makes it taste different. BUT, it is still eatable.
