I'm no cook or chef but there is a simple recipe that I eat at least once a week. I pick up about 40 to 50 ounces of frozen purple hull peas, a 16-ounce package of frozen seasoning mix (peppers & onions), a can of sweet whole cornel corn & a can of diced tomatoes. I put the peas, the seasoning mix & some salt, to taste, in a pot of filtered water on high and bring it to a boil. Then I reduce the temperature to about 2 and let it simmer for about an hour. Near the end I drain the corn and add the corn and the can of tomatoes. There you have it, Purple Hull Pea Soup.

I would suggest that you try 'Cheesy Tater Bake'. Everyone at my home (from my mother to my 17-year old sister) enjoys the recipe. It taste good [to us] and it is quick & easy to make. The recipe takes no more than 5 minutes to prepare; 25 minutes to cook.
If you decide to go with this recipe then I suggest that you eye the amount of ingredients you use. What I am going to post serves about six people.
INGREDIENTS
1 lb. ground beef
1 package (16 oz.) frozen OreIda crispy crowns (or tater tots)
3/4 cup Ragu cheese sauce
1 cup Taco Bell Home Originals mild taco sauce
DIRECTIONS
Preheat oven to 425°F. Brown meat; drain. Mix with remaining ingredients.
Spoon into 13x9-inch baking dish.
Bake 20 minutes or until heated through.
KITCHEN TIPS
You are welcome to substitute 1 lb. of boneless skinless chicken breasts, cut into small pieces, for the ground beef. You may cook and stir the chicken breasts in a large nonstick sillet until cooked through. Then continue as directed.
Otherwise you may use ground chicken or ground turkey if you do not enjoy red meat.
