Cracklings (or cracklins as we call them here in the Southern USA) are just little pieces of deep fried pork skin. They are really good when baked in cornbread. As for a "crack"--that is like asking "what is a grit?" Cheers and happy eatin'!

Cracklin' is little pieces of fried pig fat with some of the skin left on. Some people refer to pork rinds as cracklins but it depends on where you are in the world.

Pork rind is the cooked fat of a pig. This may be either eaten warm with a meal, or served cold as a snack. In both forms any fat attached to the skin at the time of frying is absorbed in the process.

Dime sized pieces of pork fat/skin fried til crunchy....Nothing's better than a big piece of cracklin cornbread crumbled up in a glass of buttermilk for a bedtime snack....Mmmm!!

Traditionaly in England especially ... when they cook roast pork on Sundays ... they cook it with the fat ... the fat goes really crunchy ... its gorgeous ... now go out and get yourself some good crackling!!!!!! hmmmmmm i want some now :(
