I like the soft, springy texture of store-bought white cakes (e.g. birthday cakes). I've tried a few recipes, but the texture doesn't come out right - big bubbles/holes in the cake. Anybody have any good recipes? Thanks.

Many bakeries and home bakers actually use Duncan Hines White Cake Mix for their birthday cakes, etc. They add 1 tsp of almond to the mix. This will give you a texture and taste that is very similar to the store-bought cakes that you like so well. Also, if you look on the inside of the box of Duncan Hines White Cake Mix, you will find the directions! I think it is on the inside of the Yellow Cake Mix box too.

If you are making a scratch cake, you should either use Cake Flour or use White Lilly flour as they contain the type of flour that will cause a lighter textured cake. If you haven't used either of these flours, try them, as you will be amazed at the difference in the lightness of the cake.

Here is a popular recipe:

Simple Dream Cake

1 package (18.25 ounces) yellow cake mix with pudding
1 envelope (1.3 ounces) Dream Whip whipped topping mix
4 large eggs
1 cup cold water

1. Preheat the oven to 350 degrees. Mist a 13- by 9-inch pan with vegetable oil spray and dust with flour. Shake out the excess flour. Set the pan aside.

2. Place the cake mix, topping mix, eggs, and water in a large mixing bowl. Mix on the low speed of an electric mixer until combined, then increase the mixer speed to medium and mix for 4 minutes longer, or until well combined and increased in volume.

3. Pour the batter into the prepared pan, and place the pan in the oven. Bake until the cake tests done and is golden brown, 40 to 45 minutes. Remove the pan to a rack to cool, then frost the top as desired.
