Mayonnaise Cake
"Mayonnaise makes this cake nice and moist."
Original recipe yield: 2 -8 or 9 inch layers.
INGREDIENTS:
1 cup mayonnaise
1 cup white sugar
3/4 cup water
2 cups all-purpose flour
1 1/2 teaspoons baking soda
4 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8 or 9 inch round cake pans.
Sift all-purpose flour, salt, baking soda, and cocoa together.
Whip mayonnaise, white sugar, cold water, and vanilla together until mixed thoroughly. Add flour mixture slowly and beat at medium speed of an electric mixer for 2 minutes. Pour batter into prepared pans.
Bake at 350 degrees F (175 degrees C) for 20 to 25 minutes. Frost with your favorite frosting.

sponge cakes (with jam or sweetened whipped cream inside and icing and glazed cherries) or fairy cakes, the 2 easiest cakes to make. or rice krispie/cornflake cakes have even less (only two ingredients required)
CORNFLAKE CAKES - big bar of chocolate(the bitterness is ur choice), melt (slowly so it dont burn) and add cornflakes or rice krispies and seperate in cake cases. these taste like crunchie bars (if u know what they are :)
This recipe is basically a sponge cake with spices added, do what u want with it :)
Spiced Farmhouse Fairy Cake
INGREDIENTS
3/4 cup superfine sugar
1/2 cup margarine
2 eggs
1 teaspoon cinnamon
1 pinch ginger
1 1/2 cups self-rising flour
1/4 cup confectioners' sugar
1 pinch cardamom (optional)
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Lay out about 18 cupcake (muffin) papers on a baking sheet or place them in a muffin pan.
In a medium bowl, cream together the sugar and margarine until light and fluffy. Beat in the eggs one at a time using an electric mixer, or the whole thing may be mixed in a blender. Add cinnamon and ginger to the batter and mix well. Stir in the flour until well blended. Spoon a generous tablespoon of the batter into each paper, and level it out.
Bake for 15 to 20 minutes in the preheated oven, until the tops spring back when lightly pressed. Dust with confectioners' sugar and cardamom when cooled.

Quick, Easy cake
2 C. flour
1 1/2 t. baking soda
1/2 t. salt
1 1/2 C. sugar
1 t. cinnamon
1 can (21 oz.) cherry or apricot pie filling
3/4 C. vegetable oil
3 large eggs, lightly beaten
Powdered sugar (optional)
Preheat oven to 350°F. Combine all ingredients except powdered sugar. Stir well. Pour batter into ungreased 13 x 9 inch pan. Bake 35 to 40 minutes or until a pick inserted in center comes out clean. Remove from oven and let cool completely in pan. Sprinkle with powdered sugar if desired.
Makes about 12 servings.

This recipe is designed for kids to bake. It's incredibly easy with no mixing involved. Canned fruits are dumped into a baking pan, topped with cake mix, butter, and nuts, then baked. The result is something in between a cake and a cobbler, and amazingly delicious. Adults will also love this recipe.
INGREDIENTS:
1 (20 ounces) can crushed pineapple, undrained
1 (21 ounces) can prepared more fruit cherry pie filling
1 (18.25 ounces) box yellow cake mix
2 sticks of butter or margarine, each cut into 12 slices
1/4 cup chopped nuts (your choice - optional)
PREPARATION:
Preheat oven to 350 degrees F (325 for glass baking dish). Have a 9 by 13-inch baking pan ready.
Dump undrained pineapple baking dish or pan and spread it out evenly.
Using a spoon, dump globs of cherry pie filling evenly on top of the pineapple.
Sprinkle the cake mix evenly over the cherry and pineapple layers.
Cut butter into slices with a butter knife and place slices evenly over cake mix.
Sprinkle nuts on top if you're using them.

1-2-3-4 Cake
1 cup (2 sticks) butter, at room temperature
2 cups sugar
3 cups sifted self-rising flour
4 eggs
1 cup milk
1 teaspoon pure vanilla extract
Preheat oven to 350 degrees F.
Grease and flour 3 (9-inch) cake pans.
Cream butter until fluffy, then add sugar and beat until all sugar is dissolved. Add eggs one at a time creaming well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and beat just until blended. Pour batter into prepared pans and bake in preheated oven for 25 - 30 minutes or until toothpick comes out clean. Cool in pans for 10 minutes, then cool on rack. Makes a three layer cake.

Easy Chocolate Cake
INGREDIENTS:
1 cup Flour
1 cup Sugar(powdered)
4 nos. Egg
½ cup Butter
¼ cup Cocoa Powder
¼ tsp. Baking Soda
½ tsp. Vanilla Extract(or any other flavor)
DIRECTIONS:
1. Separate the egg white and put it in a whipper and whip atleast for 2 minutes ( till it becomes frothy )
2. Sieve the maida/corn flour, cocoa and baking powder, and keep it aside.
3. In a vessel put the butter and start mixing the sugar in it in small proportions.
4. To the mixed butter and sugar add the sieved maida, cocoa and baking powder.
5. Followed by the whipped egg.Mix it well see tat there are no balls left.
6. Grease a baking dish and add the mixed contents to it.
7. Bake it at 170c for 25 minutes.
8. Place it on a plate and let it cool.
9. Top it with delicious chocolate icing and u r ready to surprise everybody in family with the chocoalte cake they would love !!!

Sour Cream Cheesecake Recipe courtesy Alton Brown Show: Good Eats Episode: Cheesecake Crust: 33 graham cracker squares, crumbled 4 ounces (1 stick) unsalted butter, melted, plus additional, for brushing the pan 1 tablespoon sugar Filling: 20 ounces cream cheese 1 1/4 cups sour cream 1 cup sugar 1 tablespoon vanilla extract 2 eggs 3 yolks 1/3 cup heavy cream Preheat oven to 300 degrees F. Brush some of the melted butter around a 9 by 3-inch cake pan. Adhere parchment to the bottom and the sides. In a small bowl, combine crumbled graham crackers, the remaining melted butter, and 1 tablespoon of sugar. Press 2/3 of the mixture into the bottom of the parchment-lined pan. Place remaining crumbs on a sheet pan and bake both the crust and the remaining mixture for 10 minutes. Cool. Reserve additional crumb mixture for sides. In a mixer with a paddle attachment, beat sour cream for 10 seconds. Add the cream cheese and sugar and mix on low for 30 seconds and then turn up to medium. Scrape the bowl. In a separate container, combine vanilla, eggs, yolks, and heavy cream. With the mixer on medium, slowly pour the liquid mixture in. When half of it is incorporated, stop and scrape. Continue adding the mixture until the rest of the ingredients are incorporated. Once completely combined, pour into the cooled crust. Lower oven temperature to 250 degrees F. Place cheesecake into a preheated water bath, in the oven for 1 hour. Turn the oven off and open the door for one minute. Close the door for one more hour. Remove the cheesecake from the water bath and place in the refrigerator for 6 hours to completely cool before serving. When ready to serve, place the entire cake pan into a hot water bath for about 15 seconds. Unmold onto a cake round or serving dish. Take the remaining graham cracker mixture and press into the sides of the cake. To slice, place your knife into a hot water bath and wipe dry each time you make a pass through the cake.

An easy cake to make up from scratch.
INGREDIENTS:
* 1 cup butter
* 2 cups sugar
* 3 eggs, separated
* 1/2 teaspoon plus 1/8 teaspoon baking soda
* 1 1/4 teaspoons cream of tartar
* 3 cups all-purpose flour
* 1/2 teaspoon salt
* 1 cup milk
* 1 teaspoon vanilla
PREPARATION:
Cream together butter and sugar; blend in the egg yolks. Add vanilla to milk. Sift together the dry ingredients. Alternating with milk mixture, add dry ingredients to the creamed mixture. Beat well.
Beat egg whites until stiff; fold into batter, mixing just until blended. Pour batter into three greased and floured 8- or 9-inch cake pans or one greased and floured 13 x 9-inch baking pan. Bake layers at 375° for 20 to 25 minutes, or until a wooden pick or cake tester inserted in center comes out clean. Bake the one layer cake at 350° for 35 to 45 minutes, or until a wooden pick or cake tester inserted in center comes out clean.

Molten Chocolate Cakes
Ingredients
4 Squares semi sweet baking chocolate
1/2 cup Butter
1 cup Powdered sugar
2 Eggs
2 Egg yolks
6 tbsp Flour
1/2 cup Thawed whipped topping
Preparation
Preheat oven to 425F. butter 4 custard cups or souffle dishes. Place on baking sheet.
Microwave chocolate and butter in large microwavable bowl on High 1 min. or until butter is melted. stir with wire whisk until chocolate is completely melted. Stir in sugar until well blended. Whisk in eggs and egg yolks. Stir in flour. Divide batter among prepared dishes.
Bake 13-14 min or until sides are firm but centers are soft. Let stand 1 min. carefully run small knife around cakes to loosen. Invert cake onto dessert dishes. Serve immediately, each topped with 1 tbsp whipped topping
