The good ones take time to order and create. The ordering takes the longest. The florist does not stock up on the good orchids and stems.
Order a few days before. As an industry, the also keep an eye for important occasions such as grads and proms, and prepare a good stock inventory for such crisis.
On weddings they have to be ordered, period.
Dont worry. On an emergency, a good florist can whip up a substitute good enough to pass for a well prepared pin on bouquet. Just ask. Some of them like challenges.

Becasue this is prom and grad time, you should be able to get one with very little advance notice...but probably not the same day.

it depends on what kind of flower you want... typically you should call a couple days in advance. where I live the florist usually have 'extras' made up for last minute buyers.
