Polytheism literally means "many gods." To be more specific, gods and goddesses, because one important reason for having more than one is in order to resolve the gender issue. When you have a monotheism, you inevitably (in modern times, at least) have a masculine pronoun for it, and things get out of balance with regard to gender. Most humans are unable to abstract enough to "get beyond gender" as a concept, and few would appreciate a hermaphroditic image of god.

Polytheism means directing any kind of worship to other then Allah(swt)
3 types
Major Polytheism, is which invalidates belief and turns one into a disbeliever. This is caused by performing any form of worship for other than Allah(swt), such as praying to or putting ones trust on other than Allah(swt)
Minor Polytheism, is ostentation, which means to perform acts, usually done only for Allah's(swt) sake, in order to be seen of men.
Covert Polytheism, uttering phrases that signify, indirectly or implicitly, the association of others with Allah(swt) in matters which are usually addressed to Allah(swt), such as saying to someone "I have only Allah and you"....
A polytheist is someone who does one of these three..
