I was watching the UFC Liddell-Jackson fight tongiht and during the undercard matches as well as the main event, before the fight the trainers were putting this gel stuff that was clear on the faces of the fighters (under the eyes, on the forehead). They do it in boxing too. What is it and why do they do that?

That clear stuff is Vasoline or petrolleum jelly.... it is a lubricant that cuts down on the friction on the fighters face when a punch is landed. this reduces the chances of a fighter being cut.
