I am still looking for a cable that will connect from a DVI port on my PC graphics card and the Coax to a HDMI in on my TV. Is there such a thing?

Most TVs will not decode DD audio over HDMI input, so even if you find the cable, it will not work.
(The digital audio port they have is Output only)

Here are your options
DVI-HDMI cable from PC to TV for video.
3.5 mm audio to 3.5 mm audio (or RCA stereo) for stereo audio to your TV. (The TV has 2 speakers anyhow).

Or connect digital audio (coax) from your PC to an AV Receiver.

That does not make any sense. Why would you want to have a surround sound audio cable go to your TV? Don't you want your audio going to your surround sound receiver?

You should have the DVI go to your HDMI, then have the audio cable go from your computer to your surround sound receiver.

TVs would only support stereo because TVs only have 2 speakers.
