This is an old-fashioned creamy rice pudding, baked, with no eggs.
INGREDIENTS:
1 quart milk, scalded
1/4 cup long grain rice
1/4 cup granulated sugar
1/2 teaspoon vanilla
PREPARATION:
Preheat oven to 300°. In a 1 1/2 quart baking dish, combine all ingredients. Bake for 2 1/2 hours, stirring every 20 minutes. This will give the pudding a creamy texture.

4oz or 110g short grain rice
11/2 pts milk 845ml
2oz butter 50g
3oz sugar 75g
nutmeg
pre heat oven 300f
first simmer rice in milk until nearly cooked about 10 mins
take off heat and add butter and sugar stir until dissolved
put mixture into a baking dish, sprikle grated nutmeg on top and pop into the oven for 30.to 40 mins

In Greek cook books. I'll gladly share my recipe from one, if you would like to try it. Let me know, please. But in the mean time, here's simple tasty one that I some times use-
HONEY RICE PUDDING:
2 cups water
2 cups sprite
1 1/2 cups powder milk
1/2 cup long grain rice
1/2 cup raisins
1/4 cup honey
1/2 teaspoon salt
1/2 teaspoon vanilla ( vanilla paste works fine, so far.)
1/2 teaspoon ground cinnamon
Heat oven to 300 f. In a 1 1/2 quart casserole idsh, combine all ingredients, except cinnamon. bake, uncovered at 300 for about 2 hours, gently stirring every 20 minutes. Spinkle with cinnamon and serve it warm.

Butter and milk should equal about three times the measurement of rice with sugar to taste. Add all to pot and cook slowly stirring often until creamy and soft. Do not allow to boil or stick. Mostly it's simply just labor intensive as it must be watched carefully or it will burn and be ruined.

I cook the rice with water only. After cooked I add milk and let boil. Add bit of butter and sugar. After cooked , I make a caramel sauce with the sugar, thin and mix with the rice/

1 3/4 cup milk
1/2 cup minute rice -uncooked
2 tbsp sugar
2 tbsp raisins (optional)
1/4 tsp. salt
1 egg
1/4 tsp. vanilla
Combine milk, rice, sugar, raisins and salt in medium saucepan. bring to a boil, stirring constantly reduce heat med -low simmer uncovered 6min stir occasionally.
Beat egg and vanill with wire whisk until blended - add small amount of hot milk mixture-mix well, return to saucepan, cook and stir on low heat one minute DO NOT BOIL*
Remove from heat let stand 30min, serve warm, sprinkle cinnamon or nutmeg over. Store remainder in fridge~
or..1/3 left over cooked rice, put into oven dish,, 1/4 cup sugar, handfull of raisins in, add a dash of vanilla, a tbsp. margarine,and pour milk over 1/2" ontop. Put dish on tray put in preheated oven 350F for 40-45min*
