Add one teaspoon of lemon juice or plain white vinegar to 2 c of milk. Use as needed in recipe.

Ingredients
1 cup (225 ml) whole milk
1 tbsp (15 ml) lemon juice or vinegar

Preparation
Place the lemon juice or vinegar into a cup of whole milk--the closer the milk is to room temperature, the better.
Stir and let sit for 10 minutes.
You now have sour milk to use as a substitute for buttermilk.

Buttermilk Pie

Third Place Pie - Beverly Monroe

This recipe is from Chef Harry Hightower who served in the Navy on the USS Missouri. The pie was served to President Harry Truman. Truman asked for the recipe but Chef Hightower refused to release it until later when he retired from the Navy.

1-10 inch piecrust
1/2 to 3/4 cup chopped pecans

Spread pecans in a shallow baking pan and bake at 350 for 5-10 minutes and set aside.

2 cups sugar
1/2-cup real butter softened
3 eggs
3 tablespoons four
1/4-teaspoon salt
1-cup buttermilk

Beat sugar and butter until blended. Add eggs one at a time beating each one. Gradually add dry ingredients, flour and salt. Add buttermilk and blend well. Pour into crust and top with pecans. Bake at 300 for 1 hour and 15 minutes or until filling is set and golden brown. Cool completely and refrigerate.

My simple recipe for this is:
1 TB cider vinegar per 1 cup of milk. Let sit 5 mins until it started to look like it is 'curdling' You can also use this as a substitute for buttermilk in recipes.

You just let it sit out on the counter for a long time.

I'm curious, what recipe would call for sour milk?
