Meatballs are often baked. I feel you get a better shape that way. If they are pan fried, they are often quickly browned, then finished by "boiling" in a sauce.

NO NO NO!!!!!! dont boil them!!!!! brown them first in a pan them finish them off in the oven. Or just bake them in the oven! These recipes should help you
lb lean ground beef
1/2 cup Italian bread crumbs
1/3 cup water (more or less)
1/4 cup grated Parmesan cheese
1 medium onion
garlic
salt
pepper
PREPARATION:
Mix all ingredients together. Don't add all of the water at one time. Mixture should be moist but not so that the meatballs fall apart.
Shape meatballs to desired size and place on a broiler pan (I wet my hands before shaping each meatball and it helps make a nice meatball.) Broil until outside is slightly brown on one side and then turn and broil the other side.
When finished, add to spaghetti sauce and simmer at least 20 minutes

Vegetable oil 1 tablespoon
Lean ground beef 2 pounds
Eggs 2

Whole milk 1/2 cup

3. Mix remaining ingredients together in bowl; add onions. Mix until blended, using a large serving spoon.
4. Shape beef mixture into 1- to 2- inch meatballs; place on baking sheet.
5. Bake until thoroughly cooked, about 10 to 12 minutes.

Hi Eve... not only do I throw the meatballs in uncooked, I put chicken breasts in and put the lid on and let them simmer away. You have to make sure that you don't boil them to the point that the pan burns .. just make sure that they are simmering. Before the boil begins throw in some chopped up fresh garlic... shake in some parmessan cheese and any other Italian herbs that you love. Simmer for as long as you feel comfy... 2-4 hrs. When the pieces of chicken pull apart, you have a delicious sauce that your family will ask you to do over and over. I sometimes put (uncooked) sausage in too. As long as you have enough sauce to cover it all and it won't burn then you will have an extremely GREAT sauce to cover pasta, or on a hard roll. (oh, don't forget the green peppers!) my goodness.... my mouth is watering writing all this..

I have been making them for years with a recipe passed on from generations of Sicilian relatives. I will give you a short recipe that will make about 50 meatballs.
HINT: Don't try to cut corners by using powered garlic or onion powder, it won't taste the same.
2 lbs of 80% lean ground beef
1 lb ground pork (a must for flavor and tenderness)
3/4 cup of finely chopped fresh parsley
4 cloves of garlic, chopped very fine
1 medium, onion finely chopped
3/4 cup of progresso Italian seasoned bread crumbs
2 large eggs
1/4 cup of parmeasan cheese
1/3 cup of milk (do not use water!)
1/2 tbls salt
1/2 tbls black pepper
Put all the ingredients in a large bowl and blend together, by hand until it is well mixed, making sure the beef and pork are well blended as well. (I usually taste a small pinch of the mixture to make sure the salt is right. It hasn't killed me in 50 years so I guess it's ok)
Now wet your hands and pull a small portion of the meat mixture and roll, gently, into a ball about the size of a handball. (larger, slightly than a golf ball) DO NOT ROLL EXCESSIVLY AS THIS WILL MAKE THE MEATBALLS TOUGH!! If they begin to stick to your hands, wet them again as needed.
You may fry them in a heavy skillet with just a light coating of olive oil in the bottom, turning them about 3 or 4 times until the sides are lightly browned or,,,,,,,,,,you can line them up on a square pizza pan and bake them in the oven @ 400 degrees until they are browned, about 20 minutes but watch them closely. (careful not to burn the outside)
Generally I then put them in my sauce and let them simmer for about 4 hours to make them really tender but if you have another way you want to serve them, they're ready.

Pan fry for about 3-4 minutes on each side. DON'T boil them.
Another nifty method is to use a mini-muffin pan and bake them (the balls stay perfectly round) - Bake at 400 for about 20 minutes

Well, whatever you do, don't boil them. You'll end up with grey rubbery things.

Here's one I use and the site belows shows you how to.
EASY BAKED MEATBALLS
1 lb. ground beef
1 env. onion soup mix
1 egg
Bread crumbs, to desired consistency
1 tbsp. milk
Dash salt and pepper
Mix all ingredients together, roll into balls. Place in baking pan. Bake in preheated oven at 350 degrees for 1/2 hour. (Great for spaghetti, or just as is.)

No you do not boil them. You pan fry them, but I make all of mine and put them on a cookie sheet and bake them. It is much less messy.
Probably about 30 to 40 min. in a 375degree oven. Just break one apart and check that is it done in side.
Just a little hint to get children to eat things they do not want to.
I put oatmeal in mine as the binder and process the onions, carrots and pepper to get them to eat veggies.

Some alternate recipies:
Meatball soup (aka. abondigas)
ball meat mixed with uncooked rice and spices (salt pepper, etc.). Place in large pot of water, cook 15 minuites, add chopped carrots, potatos, cook 15 minuites. Add can of mixed veggies or green beans, corn or peas (to your taste). cook 15 minuites, add coursely chopped cabbage just to top and cook 15 minuites. Done! (by cook I meant boil each time).
Pan meatballs
Ball meat mixed with uncooked rice and spices. place in baking pan. In seperate bowl, mix tomato sauce flavored with worchester sauce, then pour over meatballs. Bake in 350 deg. oven, covered in foil for 45 minuites. Serve over white rice.
