Lemon Thyme Potato Salad
2 1/2-lbs small red potatoes
8 oz green beans trimmmed cut into 1" pieces
1 sml. red onion diced (1/2cup)
1 tbsp grated lemon zest
2 tbsp white wine vinegar
1 tbsp. dijon mustard
1 tbsp. chopped fresh thyme
1 tsp.salt
1/4tsp.pepper
1/3 cup olive oil
In pot combine potatoes w/ enough water to cover 1" above....Over high heat, bring to boil, reduce heat to medium. Cook until tender 15min, add green beans during last 4min
Drain and cool
In large bowl combine potatoes and beans with onion and zest. Whisk together next 5ingredients Whisk in oil. pour over potato salad, toss
Refrigerate 30min - 3hrs before serving*

Cheesey Rice N Peas
2 tsp butter
1 sml onion chopped
1 clove garlic minced
1/4 tsp salt
1/4 tsp pepper
1 can 14 1/2 oz chicken broth low sodium
1/2 cup white wine
1 cup uncooked white rice
1 cup frozen peas
3/4 cup grated parmesean cheese
2 tbsp chopped fresh parsley

In pot melt butter over med-high heat. add next 4 ingredients, cook stirring until just tender 2-3min, add broth and wine, bring to boil. add rice. reduce heat to low, cover-simmer until rice is tender and liquid is just absorbed 20min..adding peas last 3min. Remove from heat, stir in cheese and parsley , cover let stand 5min
Try grated romano cheese in place of parmesean if you like.(chicken broth or water can replace the wine)

3 LARGE EGGS
2 CUPS SUGAR (BROWN OR WHITE)
2 CUPS GRATED ZUCCHINI
3 TEASPOONS VANILLA EXTRACT
1 CUP VEGETABLE OIL
3 CUPS FLOUR
1 TEASPOON SALT
1 TEASPOON BAKING SODA
1/4 TEASPOON BAKING POWDER
3 TEASPOONS CINNAMON
1 TEASPOON ALLSPICE
1 CUP WALNUTS

BEAT EGGS UNTIL FOAMY. ADD SUGAR, OIL, ZUCCHINI, AND VANILLA. COMBINE FLOUR, SALT, BAKING SODA, BAKING POWDER, CINNAMON, AND ALLSPICE, AND ADD TO EGG MIXTURE. STIR WELL, AND ADD WALNUTS. SPRAY 2 9X5 INCH LOAF PANS WITH NON-STICK SPRAY. SPLIT EVENLY BETWEEN PANS, BAKE AT 350 FOR ONE HOUR, OR UNTIL TOOTHPICK INSERTED IN CENTER COMES OUT CLEAN.

NOTES: WHEN GRATING ZUCCHINI, GRATE EXTRA AND FREEZE IN 2-CUP PORTIONS. THIS IS THE MOST TIME-CONSUMING PART OF THE RECIPE. IF USING ZUCCHINI THAT YOU HAVE FROZEN, USE ALL LIQUID WHEN THAWED, OR YOU WILL HAVE DRY BREAD.

THIS IS GRANDMA'S RECIPE...THE ONLY COMPLAINT I HAVE EVER GOTTEN WAS "WHY ISN'T THERE MORE???"
