CHICKEN PICCATA

2 skinless and boneless chicken breasts, butterflied and then cut in half
Sea salt and freshly ground black pepper
2 cups all purpose flour, for dredging
6 tablespoons unsalted butter
5 tablespoons extra-virgin olive oil
1/3 cup fresh lemon juice
1/2 cup chicken stock
1/4 cup brined capers, rinsed
1/3 cup fresh parsley, chopped

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
In a large 10 or 12-inch skillet over medium high heat, melt 2 tablespoons of butter with 3 tablespoons olive oil. When butter and oil start to sizzle, add 2 pieces of chicken and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove and transfer to plate. Melt 2 more tablespoons butter and add another 2 tablespoons olive oil. When butter and oil start to sizzle, add the other 2 pieces of chicken and brown both sides in same manner. Remove pan from heat and add chicken to the plate.

Reduce heat to medium low and add the lemon juice, stock and capers. Return to stove and bring to boil, scraping up brown bits from the pan for extra flavor. Check for seasoning. Return all the chicken to the pan and simmer for 5 minutes. Remove chicken to platter. Add remaining 2 tablespoons butter to sauce and whisk vigorously. Pour sauce over chicken and garnish with parsley.

Deep Dish Taco Squares
2 cups biscuit mix
½ cup cold water
1( 8-oz )carton sour cream
1/3 cup prepared Ranch salad dressing
1½ pounds ground beef
½ green or red bell pepper – finely chopped**
2 Tbsp. chopped onion**
1 pkg taco seasoning mix (¼ cup)
1 (8-oz) can tomato sauce
½ cup mild salsa
2 cups shredded cheddar cheese

Combine biscuit mix and water, stirring with a fork until blended. Press mixture in bottom of a lightly greased 13 x 9 x 2” baking dish. Bake at 375ºF for 9 minutes.
Combine sour cream and Ranch dressing. Spread over baked crust and set aside.
Cook ground beef, green bell pepper, and onion in a large skillet until meat is browned and crumbled; drain well. Stir in tomato sauce and taco seasoning mix, spoon over Ranch filling.
Sprinkle cheese evenly over meat mixture. Bake at 375ºF, uncovered, for 20 minutes or until casserole is lightly browned. Cut into 12 squares to serve.

** If serving to picky children, you can omit the bellpepper and use 2 tsp. onion powder instead of fresh onions. Omit salsa and add a second can of plain tomato sauce.

Favorite Chicken Casserole

4 bone-in chicken breasts (boil, de-bone, then tear into small pieces)
3 stacks Townhouse or Ritz Crackers
1 stick butter
1 can cream of mushroom soup
1 can cream of chicken soup
1 cup chicken broth-saved from boiling the chicken
1 8-oz. sour cream

Crumble 1 1/2 stacks of the crackers into a 13x9 glass baking dish. Place chicken on crackers. Chip 1/2 of the butter on the chicken. Mix sour cream, broth and soups together. Pour over the layers. Crumble remaining crackers over the top and chip remaining 1/2 stick of butter over all. Cover with foil, and bake @ 350 degrees for 30 min.; uncover and bake for 20-25 minutes more, or until crackers are goldeny brown. on top.

Here is one that I uncovered. It is pretty easy to make...

Baked Spaghetti
1. Make your Spaghetti noodles & Sauce (However you like to make your Sauce, I usually just buy a jar or two, depending how big of a dish you want to make). Make sure that you have enough sauce so that the dish has extra sauce, or it will be dry.

2. Put a layer of your sauce and noodles down in a baking dish, followed by a layer of mozerella & fresh parmesean cheese. Then put the rest of your sauce an noodles down followed by another layor of mozerella and parmesean.

3. Bake at 350 for about 30 minutes, or just watch the cheese, you want to pull it out right about when the cheese is starting to turn a little brown, not after its just melted.

4. Serve with garlic bread....


This dish is great left over food for the next day as well, I am assuming it would probably make a good potluck dish too.

APPLE CRUMB PIE

INGREDIENTS
- 1 GRAHAM CRACKER CRUST
- 5 MEDIUM APPLES
- ½ CUP SUGAR
- ½ CUP BROWN SUGAR
- 1 TSP CINNAMON
- 3 TABLE SPOON FLOUR AND 1 CUP FLOUR
- STICK OF BUTTER

DIRECTIONS
1) Preheat oven to 400 degrees
2) In bowl #1:
- peel and core apples (5 apples)
- Slice into wedges
- Add ½ cup sugar, 3 tablespoon flour and 1 tsp cinnamon
- stir well until apples are covered with above mixture.
3) In Bowl #2:
- combine ½ cup brown sugar, ½ cup butter, 1 cup flour
- Mix until crumby (use hands)
4) Pour apples into crust
5) Top with crumbs
6) Bake for 50 minutes
7) ENJOY

Crockpot/slow cooker-
peel and chop up a few carrots
peel and chop up an onion , put in bottom of slow cooker,
take chicken breasts or chicken thighs,or legs or pork chops...brown in fry pan for a few minutes, add ontop of the carrots and onions
season with salt / pepper,
add some bbq sauce, diannas sauce or HP sauce to a cup of water, stir, then pour over meat and veggies. put lid on, turn on low and walk away for 5-6hrs. Make some 5min rice when ready to serve

Pita bread pizzas.
take the pita bread and put spagetti sauce ontop to coat, grate cheese, and whatever else you have on hand that you enjoy for a topping on your pizza(pineapple chunks, onion, green pepper, left over italian saucege slice up and put ontop, or left over deli slices of sandwich meat (ham, salami..chop up small)....bake 425F oven for 8-10min-when cheese has melted* have a side dish of salad
