Ingredients
For the sweet pastry:
225g/8oz plain flour
110g/4oz caster sugar
110g/4oz butter
4 egg yolks

For the pecan filling:
3 eggs
110g/4oz sugar
4 tablespoons golden syrup
2 tbsp rum
50g/2oz butter, melted
a pinch of salt
a few drops vanilla extract
175g/6oz pecan halves

Method
1. Make the pastry by putting all the ingredients into a food processor and whizzing until you get a dough.
2. Remove and place in a plastic bag and put into the fridge to relax for 1 hour.
3. Preheat the oven to 200C/400F/Gas 6. Line a 9in/23cm pie tin with the pastry.
4. Break the eggs in a large mixing bowl and beat well and then beat in the sugar. Add the remaining ingredients and mix well.
5. Pour the mixture into the pastry case and bake for 10 minutes and then reduce the oven heat to 180C/350F/Gas 4 and bake for another 30 minutes or until the top of the pie is golden. Check if it s cooked through by inserting a skewer, it s done if it comes out clean.
6. Turn out of the tin when slightly cooled and serve warm or cold with vanilla ice cream or a spoonful of crème fraiche.

Pecan Pie

INGREDIENTS:
1 cup light brown sugar
1/4 cup white sugar
1/2 cup butter
2 eggs
1 tablespoon all-purpose flour
1 tablespoon milk
1 teaspoon vanilla extract
1 cup chopped pecans

DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, beat eggs until foamy, and stir in melted butter. Stir in the brown sugar, white sugar and the flour; mix well. Last add the milk, vanilla and nuts.
Pour into an unbaked 9-in pie shell. Bake in preheated oven for 10 minutes at 400 degrees, then reduce temperature to 350 degrees and bake for 30 to 40 minutes, or until done.

Pecan pie is a typically southern U. S. A. dessert. It is made in a pie shell and made of lots of pecans (a nut) and lots of sugar. It is very sweet.

You haven't lived until you've had a well-made Pecan Pie. Yes they are nuts and look a little like walnuts, but there is a tremendous taste difference.

I grabbed this recipe off chefs.com, but you may want to look over the other pecan site I've offfered below.

Best Pecan Pie
The Recipe

Prep Time: 15 minutes
Cook Time: 60 minutes
Total Time: 75 minutes
Servings: 8

Ingredients
1 pre-baked 9 inch pie shells
1/4 cup unsalted buttercut into 1-inch pieces
1 cup dark brown sugar
1/2 tsp. salt
3 eggs, room temperature and beaten
1/2 cup light corn syrup
1/4 cup real maple syrup
1 Tbsp. real vanilla
1 cup pecan pieces(4 ounces)
1 cup pecan halves(4 ounces)

Instructions
Preheat oven to 350 F. In two separate batches, spread pecan pieces and halves on baking pan and bake each for 10 minutes or until lightly toasted. Lower oven temperature to 275F.

Melt butter in top of double boiler over simmering water. Remove top pot from heat and stir in sugar and salt until butter is absorbed and mixture has cooled. Beat in eggs, syrups, and vanilla. Return pot to heat and continue stirring mixture until glossy and warm. Remove mixture from heat and stir in pecan pieces.

Pour mixture into pie shell and sprinkle pecan halves evenly over surface. Bake approximately one hour or until center is firmly set. Cool pie on rack at least one hour. Serve at room temperature, or slightly re-warmed, if desired.

I am here to tell you that if you live in the UK and are near a COSTCO warehouse they sell it there.
you need to be a member or know one but do try and get some. The pie is large enough for about 12-15 portions so beware!!
