Where are you from? I never heard of using potato salad in a sandwich. Is there anything special you do to make it "sandwich material"?
I guess I would serve something like this with sweet Gherkin pickles or marinated, pitted Greek olives.

I've never heard of potato salad being made into a sandwich but I would guess mayo and/or pickle relish would be good.

Dill and a tomato or fruit based chutney. If you are craving potato salad sandwiches add anything mate...you'll be right.

Curried Potato Salad factors: 2 kilos all-objective potatoes, scrubbed (I used small white potatoes) a million teaspoon cumin seeds a million teaspoon mustard seeds a million teaspoon curry powder a million/8 teaspoon floor crimson pepper 2 tablespoons sparkling lemon juice a million teaspoon grated sparkling ginger a million teaspoon salt 2 tablespoons olive oil a million/4 cup minced crimson onion 2 jalapeno chiles, seeded and minced (I used one) a million cup frozen peas, thawed (I used a million/2 cup) a million/4 cup chopped sparkling cilantro instructions: a million. Boil potatoes in salted water, in simple terms till soft. Drain. Cool somewhat, peel and cube small. 2. Toast cumin, mustard, curry and pepper in small skillet over low warmth, till aromatic, a million minute. circulate to great bowl. Whisk in lemon juice, ginger and salt, then oil. upload onion, jalapenos and heat potatoes; toss. Cool. 3. upload peas and cilantro. Makes 6 cups.

When I make mine, I usually crush some potato chips on top before putting on the top slice of bread. The crunchy/salty thing is delish.
