Ultimately because we believe it's a commandment. While the word of wisdom is a health code, we also don't take these things into our bodies in order to stay more sensitive to the promptings of the Holy Ghost. Jesus was plenty sensitive to spiritual promptings, he didn't need help, we do.

I don't really know or care if what Jesus drank had alcohol or not, he hadn't finished his atonement at the time, and was still in many ways living and respecting the law of Moses.

An interesting factoid for why we use water instead of juice at the sacrament (interesting answer that Christians use juice out of respect to alcoholics btw- I think that's great). The LDS church started using water in the sacrament before the word of wisdom was even given and accepted as a commandment because someone was plotting on poisoning a whole congregation by poisoning the sacrament wine. Water has since been used as a safety measure.

Biblically speaking, their wine was much different than our wine today. Anything made from grapes was called wine, whether it had alcohol or not. Many societies relied on these drinks for their main source of moisture, as often they did not have pure enough sources of water for drinking purposes.

Not to mention translation issues from Hebrew and Greek into english, that changed the meaning of wine (among other words).

This website has a really good article on the differences of the wine spoken of in the bible and the wine/alcohol today:

So, Mormons believe it a commandment from God to abstain from all alcoholic beverages. So we use water.

Mormon's drink water and most Christians drink grape juice. Mormons have different reasons to Christians for this, same as for tea, coffee and coke which are prohibited in their belief. Christians usually use juice in respect of those people who might be fighting alchahol addiction. It is only a symbol.
