If they cannot surface to breathe yes it would kill them
I never used a trap like that , I would tie mason string to a large hook put bacon or fish on it . Then tie the other end to a 1 or 2 inch sapling tree that had some give to it and was rooted solidly to the bank of a creek or lake . None of my turtles died that way some would dig under the bank and hide till i pulled them out
It would catch all the turtles I wanted that way I never tried a trap

Gotta make sure there's air space for them, otherwise, yes, they do. If you're looking for pet turtles, go to a breeder or pet store, if you want them "out of your pond" like a lot of people do, you will never get rid of all of your turtles, because turtles like it. As soon as you get rid of some, others will come in from neighboring bodies of water to take their place. If you're wanting to make soup, what does it matter if the trap kills them (as long as it's not horribly hot out and you're checking it pretty often, trust me, you'll know if you're too late on a dead turtle) or you do? Everyone I know who supplies turtle meat keeps them refrigerated for at least 24 hours before doing the deed because of nerve response... nothing like going to skin an alligator or butcher a turtle and having the darn thing twitching on the table... accursed reptiles......
Edited to add....
Now don't get me wrong, I love turtles, both alive and as soup. I'm strange like that... I can eat them, but I'm not sure unless I was in a find your own food or starve situation, I don't think I'd be able to bring myself to butcher one, I've had too many as pets before I started eating them.
