Perla answer is formally correct, but "preferito" is far more used then "favorito", and for sure it's used when talking about food; so, if you want to ask a waiter "what is your favorite dish" it's better saying "qual è il suo piatto preferito?" (use "suo", formal, since you don't know the waiter). "Vostro" used when talking in formal way to one person was in use till the 50s, now not anymore.

When you're at the restaurant and you want know which is the best dish to eat there you'll need just ask :
"cosa mi consiglia ??" or "cosa avete di buono ??" or
"qual'è la specialità della casa ??"
Somebody here above has given you the correct Italian translation of yr sentence but it would sound really weird if addressed to the waiters in order of knowing the best dish to eat. If you ask him above suggested "qual'è il suo piatto preferito ?" you risk to be misunderstood and he answers
"steak" by meaning that he likes it more, while they're not serving any meat in that restaurant...!! In fact you might be equivocated you are asking him his personal preference...!!
