okay, If it were my choice I would get an It.Greyhound.They have fragile legs but they are no more fragile than other breeds you listed.IG's are not barky, aggressive, most are loving calm couch potato love bugs. They do need to be kept warm in the winter and will most likely sleep under the covers of the bed but you will never be sorry for choosing a needle nose love bug.

I've always thought that Maltese look adorable. If I liked small dogs, I'd get a Maltese.
If you're willing to, adopting a Maltese or Maltese mix would be a great idea. I'm positive you'd be able to find a Maltese x Toy Poodle on http://www.petfinder.com but not sure about an Italian Greyhound mixed with either a Toy Poodle or a Maltese.
Start checking out the Parent Club for each breed and getting in contact with a few reputable breeders.

The only one of the 3 that I have owned was a toy poodle and she was a wonderful dog. I would highly recommend them. The Maltese, I do not know a lot about so cannot say one thing either way about them. The Italian greyhound is a great dog, but very, very hyper, specially as pups and young adults. A friend of mine raises them and they are great pets but like I said really hyper. Of the 3 I would recommend the toy poodl;e because I have more experience with them and I would not own an Italian greyhound because of their hyper nature.

Being that you are a beginner, you would probably do best with an adult dog from a rescue. There are thousands to choose from including purebreds. That way you won't have to deal with puppy issues and house training, and the dog will be fixed and UTD on its meds.
I personally would probably go for the Italian Greyhound. Poodle would come in 2nd. I'm not a huge toy breed fan (my smallest dog is 85 lbs) but I think IG's are pretty fun little dogs.
Just check out petfinder.com and enter what breed you're looking for and your ZIP code.
Good luck!
PS, adult dogs bond just as well as puppies. I adopted my Great Danes at 3 years old and they love me just as much as the Great Pyrenees I've had since they were puppies.

not knowing anything about you there is no way to say.
One of the big problems is it grey hounds can very easily get broken legs. Watch jumping off furniture, kids playing to rough.
Poodles need a lot of grooming best if done by a professional groomer at least twice a year with owner doing brushing and dematting at least once a day. They are prone to ear infections and they are yappers. but poodle don't shed.
maltese have 3 layers of hair they need to be brushed in layers starting with the bottom and need to be brushed at least 2 times a day and I mean thouroughly brushed.
of course each breed is prone to certain diseases.
it also depends on your activity level and your at home to spend with dog time.
i have a poodle, i had a italian greyhound and my sister had a maltese. i am also a professional dog groomer (went to school)

I once had an elderly lady for a friend. She had a wonderful little dog. A mix of some sort. She had the dog trained well and it behaved very well. Learn here https://tr.im/SIjnC
She kept an uncovered candy dish on her coffee table with candy in it. The dog was forbidden to eat the candy. When she was in the room observing the dog he did not even appear to notice the candy. One day while she was in her dinning room she happened to look in a mirror and could see her dog in the living room. He did not know he was being watched. For several minutes he was sitting in front of the candy bowl staring at the candy. Finally he reached in and took one. He placed it on the table and stared at it, he woofed at it. He stared some more, licked his chops and PUT IT BACK in the bowl and walked away. Did he want the candy, oh yeah. Did he eat it? Nope. They can be trained that well but most, I'll admit, are not trained that well. When I was a young boy, maybe 5 years old. We had a german shepherd. He was very well trained also. My mom could leave food unattended on the table, no problem. She would open the oven door and set a pan roast beef or roast chicken on the door to cool. No problem. He would not touch it, watched or not. But butter? Whole other story. You leave a stick of butter anywhere he could reach and it was gone. He was a large shepherd so there were not many places he could not reach. Really, I think the number of dogs trained to the point they will leave food alone when not being supervised is very small indeed.
.
Now if we are talking obedience training, not food grubbing, that is a different story. Way back when I was first learning obedience training one of the final exercises was to put our dogs in a down/stay and not only leave the room but leave the building for 15 minutes. The only person that stayed was our trainer, not the owners. Most of the dogs in my class did not break their stay, which would be an automatic fail. I'm happy to report my dog was one of the ones that passed.
