I have a cheesecake recipe using 6 oz Graham cracker crust. I now want to use mini graham cracker crust pies. The original recipe told me to bake for 40 mins at 350. How long would I want to bake the mini cheesecakes? Thanks!

20 minutes at 325 and check every five after that. the middle should still wiggle slightly as it will continue baking after removing it from the oven. bake them in a water bath to make sure they dont crack!

NO don't CHECK on a cheesecake by opening the oven before they're done. This is what makes them crack on top and unless you're going to have a topping that will cover the cracks, opening the oven to check on it is the worst thing you can do.

If you're not an experienced cook and you want the mini cheesecakes to come out right, it's inadviseable to try to convert a conventional cheesecake recipe. Do a web search or go to foodnetwork.com and try to find a recipe specifically for mini cheese cakes or use a no-bake recipe.

There are just some recipes that can't be converted unless you really know what you're doing.

It all varies just keep an eye on the cheesecake, you can tell by the jiggle and by the texture the top is becoming. Also if you can smell it from the other run chances are it is probably done.

Standard is 81/2 so I'd go 30 min; top should be slightly "loose".

Just make sure the middle isn't too wiggly . . . should only SLIGHTLY wiggle when pulled out of the oven hot. Good luck :)

35 minutes....grab a toothpick, poke it in the middle if it comes clean your good if it has cheesecake in it leave it until the toothpick is clean.
