I pay for a service to check all three reports and scores anytime. They have my account balances from 01/07 and some from 12/06! So my report says I've got about $7000 on cards when in reality I have nothing on them. Can request an update, or do I just have to wait?

Yes, you can request an update. Simply send a letter to all 3 credit bureaus with proof of payment, requesting they update their information. Or you can choose to wait until they get updated. They will get updated. Eventually.

My best recommendation would be, keep proof that you've paid your bills and the current balance. Then, sit back and wait until it's updated.

In the meantime, if you're requesting approval for new credit, such as a mortgage loan, you have your proof of payment, so manual underwriting will take care of that. Good luck.

You do not have to update your report, it is kept track of constantly. You can however check your report. I don't recomend it because everytime anyone looks up your credit report, it drops a few points. I was in the 800-Club and then it got checked when I bought a Corvette and it dropped to about 798 from 803.
