You can grill a plethora of protein, vegis, and even fruits. The trick with many options is to cook over low-medium heat so that you don't burn or carbonize your meal (that icky black charcoal stuff -- it's not very tasty!)
PROTEIN:
If you're thinking simple, I'd suggest either chicken or bratwurst or other sausage. I would suggest marinating the chicken in your favorite sauce (BBQ, Italian dressing, Teriyaki sauce, olive oil & lemmon juice, etc.)
You could of course grill steak, but this might be too cost prohibitive. You can also grill pork, but be aware that many people don't eat pork (particularly those who keep kosher)
If you're more adventurous on the protein side of things, you could grill some fish like Tuna or Salmon. The flakier fish will have to be grilled on tin foil (White fish, halibut, etc.).
VEGETABLES:
My basic rule for vegis is to lightly sprinkle some olive oil over them, crack a bit of pepper, and cook over medium heat. You can also skewer the vegis if they are too small and will fall through the grill (mushrooms, for example).
Easy vegis:
Bell peppers (cut into 6 or 8 pieces)
Asparagus
Onion
Zucchini and/or Squash
A little harder:
Carrots (cut into slices)
Eggplant (cut into rounds and basted using BBQ or other sauce)
Artichokes (steam for 20 minutes, then slice in half and grill)
Just about any other vegetable you can think of!
FRUIT:
Don't disregard fruit. Hot pineapple goes great with beef and cooked apple could be a fun side to fish. Be adventurous, but be careful that you don't lose the fruit down the grill!
My favorite fruits to grill:
Tomato
Pinapple (slices or on a skewer)
Apple (slices or pieces skewered)
Green banana
Peach
Pear
Others... (would suggest harder fruits -- soft fruits can get lost in the grill)

Chicken & Bacon Shish Kabobs
INGREDIENTS
1/4 cup soy sauce
1/4 cup cider vinegar
2 tablespoons honey
2 tablespoons canola oil
10 large mushrooms, cut in half
2 green onions, minced
3 skinless, boneless chicken breast halves - cut into chunks
1/2 pound sliced thick cut bacon, cut in half
1 (8 ounce) can pineapple chunks, drained

DIRECTIONS
In a large bowl, mix the soy sauce, cider vinegar, honey, canola oil, and green onions. Place the mushrooms and chicken into the mixture, and stir to coat. Cover, and marinate in the refrigerator at least 1 hour.
Preheat grill for high heat.
Wrap the chicken chunks with bacon, and thread onto skewers so that the bacon is secured. Alternate with mushroom halves and pineapple chunks.
Lightly oil the grill grate. Arrange skewers on the prepared grill. Cook 15 to 20 minutes, brushing occasionally with remaining soy sauce mixture, until bacon is crisp and chicken juices run clear.
you can make all kinds of kabobs, use beef, pork, chicken, shrimp with pineapple, peppers, tomatoes, zucchini/squash. basically use any kind of veggies you like. you can grill corn on the cob, make veggie pouches with aluminum foil, and don't forget steaks. have fun and happy birthday.

Your guest will be 'thrilled' because they'll have 'something fun to do' when they 'make their skewers' and they 'taste their own and the ones the other people make' ...

I love the first suggestion on here. The marinade I like is 1 cup oil, 1/2 cup vinegar, 1 clove minced garlic, dash of cheyanne pepper, 1/4 tsp dry mustard, 1 tsp soy sauce. It is very basic but tastes great with veggies and pork tenderloin. Cook the tenderloin whole so it doesn't dry out. Cook veggies in a foil bag. Good luck and happy birthday.

If you are having kids there do hotdog kabobs and fruit kabobs, my kids loved them. For you veggies corn bell pepper onions ect the more the better. Do a chicken and a beef kabobs that covers everyone.Toss some nice big sausages on hot and mild. All go great with the veggies, A tossed salad and a Chinese salad, And your cake your good to go.

My favorite grilled desserts:
1) skewers with strawberries, bananas, and melon
2) Peel a banana. Slice it almost all the way lengthwise. Stuff slice with chocolate pieces and minimarshmellows. Wrap in foil and grill till warm--OOOEY GOOEY!
