You mean "foreign" language? We usually have a simple choice, mostly between Spanish and French (or Latin for many) -- then later, German or whatever we want that might be in the curriculum.

Well, firstly we learn English grammar and spelling. Then after that, what language we choose to take (for me it started in middle school) is up to the student to choose. Usually you have a smaller number of language choices in middle school (usually limited to Spanish or French). Then afterwards in high school (for me we had to take at least 3 years of a foreign language in HS) you have more of a choice for language, and you don't have to continue your middle school route either. In middle school I took 2 years of French and in Highschool, 4 years of Latin. Not all high schools offer latin, but many will. The school curriculum in America is not standardized, so it varies from school to school which languages are offered. At mine's, there was Spanish, French, Latin, German, and Italian.

English is the language that's taught. Some schools will integrate Spanish in Elementary school, but generally other languages are optional in middle and high school.
