He is allergic to fish and I am allergic to bananas. I was thinking of making some chicken dish, but I am not sure. We live in an apartment and have a minimal kitchen set-up. Any suggestions would be welcome.

I would make chicken parmesan. It's pretty easy and here's the way I make it.

4 or 5 boneless skinless chicken breast - remove fat, rinse off
beat 2 eggs and a little milk dip the breasts in and then dip in this crumb recipe:

like 1/2 cup bread crumbs (I don't measure )
parmesan/romano shredded cheese
spices such as basil, oregano, thyme, pepper, garlic powder, onion powder...any other italian seasonings
then brown in a frying pan

Place chicken in a glass baking dish, pour sauce around it. Bake for about 45 minutes on 400. Don't cover the chicken completely in sauce because you'll have to check for doneness. Check it after 25 minutes, flip it. It'll be done when the thickest part of the chicken has no pink!

Boil spagetti in a pot following packaged directions. Also make garlic bread. Good luck!

Picnics are so under rated!
Why don't you make him dinner and surprise him take him & the food to the bay or the beach or even a nice quiet park. They have disposable grills, or some place have their own grills just bring foil & charcoal, get some London broils They are good huge portions ($6 or so) and make a nice salad (ingredients about $8) and if you want to get fancy buy some baby shrimp add some butter & garlic in aluminum on the grill & pour on top of steak (baby shrimp about $4 a lb 1lb is enough for 2) If you have a nice picnic basket and a blanket, you will have a great time. You could do it all for $40 or less unless you get a bottle of wine or something, then it will be a bit more, and all the work you do will be so gratifying later on.

This is the most simple recipe, but so delicious! My husband loves it, and he is definitely a "meat and potatoes" kinda guy. That 40 cloves recipe sounds so yummy, but this may be easier to make in a small apartment!

Ingredients:
Boneless, skinless chicken breasts
Baja Chipotle marinade (in the dressing section of your grocery store)
1 can salsa verde (I use Herdez, but any will work)
1 can black beans
1 can corn
1 can Rotel
1 package slivered almods (in the baking isle)

3-4 Boneless, skinless chicken breasts, thawed, cleaned, and de-fatted. Marinate it in Lawry's Baja Chipotle Marinade for at least an hour. (I think it is Lawry's, but am not sure. But it is definitely the Baja Chipotle, so look for that.).

In a seperate pot, heat through 1 can of black beans, 1 can of corn (not the creamed) and 1 can of Rotel.

Saute the chicken in a skillet with a little butter or olive oil. Once the chicken is almost done cooking saute one small package of slivered almonds in a tiny bit of butter (or none - it's really not even that neccessary). But WATCH OUT! Nuts burn really easily, so don't take your eyes off of it - it should only take a minute or two to brown them, stirring continuously. Once browned, dump in a small can of Herdez salsa verde. Pour over the chicken, serve the black bean / corn stuff on the side.

SO easy because it is all canned stuff, but looks and tastes really fancy!

Pelau Chicken

Ingredients
2-3 lbs chicken (breasts or thighs)
2 limes
2 tsp salt
1 tsp black pepper
3 cloves garlic -crushed
4 tablespoon Worcestershire sauce
3 tablespoon oil
4 tablespoon brown sugar
2 cups hot water
2 cups coconut milk
1 can pigeon peas (or green peas)
2 cups carrots
4 tablespoon raisins
2 cups rice (NOT INSTANT!)
1 hot pepper (optional)

Make a nice Green Salad and cole slaw to go with it

This is a tasty dish! It takes a little while to prepare, but I think it is worth it in the end! It's for 6 to 8 people, but just half it and it will be perfect for you and your boyfriend!

G i n g e r a n d M a p l e C h i c k e n

Serves 6 to 8 people.

10 Chicken breasts, cut into strips

All-purpose flour to coat chicken strips

4 Tbsp. dry Sherry

1/2 cup Vegetable oil

4 tsp. ground Ginger

1 cup of Maple syrup

2 cloves Garlic, minced

4 Tbsp. cider vinegar

2 tsp. Pepper

4 Tbsp. Soy Sauce

5 sliced green onions

In a large bowl, combine chicken strips and flour, toss until chicken is well-coated, shaking of excess flour. In a large non-stick skillet, heat some of the Vegetable oil over medium-high heat. Cook chicken in batches, about 5 minutes, turing often and adding more oil if necessary, until golden brown on all sides. Arrange cooked chicken in a single layer 11" by 9" dish. In a small bowl, whisk together maple syrup, vinegar, soy sauce, dry sherry, ginger, garlic and pepper. Pour evenly over chicken. Bake, uncovered, in a 350 degree oven for 30 to 40 minutes. Serve garnished with sliced green onions. Serve over rice.

*You can easily cut this recipe in half for less people.

Here is a yummy salad to go along with it...

M a n d a r i n O r a n g e S a l a d

Serves 5

1/4 cup vegetable oil

1/4 cup cider vinegar

1/4 cup white sugar

2 tsp. dried parsley

1 tsp. salt

1 pinch ground black pepper

1/2 cup sliced almonds

1/4 cup white sugar

1 head of lettuce - I use Romaine lettuce

1 onion sliced - Red or White

1 cup chopped celery

2 (11 ounce) caned mandarin orange segments, drained

In a jar with a tight fitting lid, combine the oil, vinegar, sugar, parsley, salt and pepper. Cover and shake well. Refrigerate until ready to use. In a medium saucepan over medium-low heat, cook and stir the almonds and sugar until sugar is melted and the almonds are coated. Remove from heat, cool, and break apart. Store at room temperature until ready to serve salad. In a large bowl, toss together the lettuce, celery, oranges, almonds and dressing until evenly coated then serve!

I usually stick to something basic that I know my husband will like. Sometimes, I have some little appetizers when he comes home, nice olives, different cheeses and crackers. I get some nice quality steaks, baked potatos, mini corn on the cob and a nice wine. Pie or cake with ice cream is good for dessert.. Most guys like steak and simple foods.

I would say stick with something simple, yet elegant. Perhaps chicken breast poached in white wine, with a nice pasta and some asparagus (hollandaise would be good on the asparagus). Make a salad with spinach or arugula. For dessert, you can do chocolate dipped strawberries. You can melt the chocolate in your microwave. Have wine with dinner; perhaps brandy with dessert. And don't forget the candles and some nice background music to set the mood! You don't want to make the meal too heavy, as you don't want to be too full for the romance ahead! Happy anniversary!

try this--my son starting making this and it's delicious---cut up in pieces and cook up a couple of boneless skinless chicken breast in a fry pan with olive oil. in the mean time- boil some rigatoni or spiral pasta and also at the same time start warming a jar of prego spaghetti sauce. also start cooking some garlic bread in the oven. when the chicken is done-put it in the sauce. when all is done (and it doesn't take long at all) serve the chicken pasta sauce of the pasta and serve with the garlic bread!! hope you enjoy it!!

Maybe dinner and a movie? Make it romantic. Or else beach at night have a picnic have a good anniversairy
