cheese may be frozen in blocks no less than one-half pound each. Seal each block in plastic wrap or foil and then place inside a zip-top bag. Be sure to squeeze out as much air as you can before sealing. Use within six months. Frozen cheese should be defrosted in the refrigerator and used quickly. The freezing process may cause a bit of crumbling, but it should be fine in cooked dishes.

You can freeze Cheddar but the texture of it changes in the freezer. It will crumble more easily once it's thawed so don't expect to be able to slice it. This doesn't apply to all cheeses. The ones with higher fat or moisture content tend to come out of the freezer more like the original texture.
If you want to use it later for things like burger and sandwiches, I'd suggest grating it up before freezing. That way even it it crumbles, you won't have large chunks to contend with.

Sharp cheddar freezes just fine! But I'd shred it first. The quality is a bit worse with a thawed block. But shredded is just like you just bought it. Put it in a ziplock and push all the air out and plop it in the freezer. Cheese on demand!

Oh My Rebekkah, Yes you should and to be safe you should send the rest of that Super Sharp Cheddar Cheese to me for safe keeping...I will eat it, I mean protect if for you with my life... Did you know the Moon is made of Green Cheese, that is why I want to go to the moon...Do you think Green Cheese is sharp? Cheese will freeze alright but I would still vacuum seal it with something like a Seal-a-Meal. This type of seal would probably keep the cheese fresh for a year or more.
