Because all of our brains form differently in response to our changing environment. No one experiences exactly the same things, so everyone has different opinions and skill-sets.
A soul is a construct that is an illustion of the mind. You are either using the word to describe the sensation that the "mind" is seperate from the brain, or that the emotions are seperate from the brain, or some combination thereof.
The brain is the centeral control of our body and is where all our perceptions, emotions, and thoughts occur. Just little electrical firings between synapses. What you see, feel, smell, hear and think are all processed in the central nervous system. The brain is still the most complex and mysterious structure that science is investigating, but there is no proof that there is some "ghost in the machine." Or soul if you prefer. (And I wasn't even a biology major, sheesh...)

Science can't prove everything, science is a tool to be used to explain the real world. The soul is a mythological construct so science can't explain it since it doesn't exist in the first place. Everyone is different because we are. It's just that simple.

Oh some of the poor misguided little people who answered this question.
First of all science was created by mortal man, so what did mortal man use to create this science, answer 3 lbs of jello

Fact, let me rephrase that " SCIENTIFIC FACT"
the human brain takes in 400 billion bits of information PER SECOND, AND YET WE ONLY PROCESS 2000 BITS.
I am gonna go way out on a limb here and say that there may just be some stuff going on that we have yet to associate ourselves with.
It is ok to be an atheist and it is ok to say I don't know, but please, please, please if you are not educated do not try to debate an issue you have no material to back up.

Who told you "science can prove everything"? Or that it even tries to? "Proof" is something better suited to mathematics. Science offers ways of examining and interpreting data using the scientific method.
As for why people are different, psychology offers some of the best answers in this department. Try researching the subject. Many answers are out there if you're simply willing to go to the library.

A. Science NEVER said it could prove everything.
B. The soul has NOTHING to do with everyone being different, its called genes, your upbrining, society, and a host of othe things that I could write here but don't feel like doing.
C. The soul does not exist... in my opinion.

Science doesn't have to explain the soul... the soul hasn't even been proved to exist.
You prove the soul exists and I'll find you a scientist who can explain it.

We are all the result of our environment, upbringing, and random chance.
No two lives are exactly alike - so no two people will ever be exactly the same.
It's actually more evidence of a chaos based reality than any kind of order or creation.
