For mother's day I did kebabs (my own version of souvlaki), and with it I did a simple pasta salad.
Cook up some orzo according to package directions, drain, then immediately run under cold water (quick chilling method) and drain again.
Grill some asparagus along side your souvlaki. I just rub mine with some olive oil and a little salt & pepper.
Now halve some cherry or grape tomatoes, cut the asparagus into bite size pieces, crumble up some feta and toss all ingredients with orzo adding a lemon vinaigrette.
LEMON VINAIGRETTE:
Use equal parts lemon juice and olive oil, pour lemon juice into bowl and whisk in olive oil in steady stream. Seaon to taste with salt and pepper. Use some fresh herbs if you like such as parsley, thyme, or basil.

How about a nice fresh spinach salad, with walnuts, sliced (or cut up) fresh strawberries, red onion & feta cheese (see other ingredients below). I prefer the mature spinach to the baby spinach... it's firmer and has more flavor. Make a strawberry vinaigrette to go with it if you have an appliance that will puree the strawberries. I use the Bullet (my new favorite gadget), as I don't have a food processor. I keep this dressing and salad very simple. It just seems wrong to have it too highly seasoned or the salad too over loaded with goodies. The feta cheese gives it that slight Greek influence.
Dressing (3-1 for vinegar and oil):
● White wine vinegar
● Canola
● crushed tarragon
● pureed strawberries (amount to taste)
● a touch of sugar
Shake all ingrediends well, and again just before tossing salad
Salad:
● Spinach
● chopped walnuts
● feta cheese
● sliced or cut up strawberries
● thinly sliced red onion
● thinly sliced celery
● feta cheese (crumbled)
● grated carrot
● remove any stems from spinach leaves
● Put all salad ingred. in a large bowl and toss
● add dressing and toss well
NOTE: you can put the the spinach in the bowl and then the other ingredients on top so your guests can see how pretty it is.. then add the dressing and toss.
Enjoy! It's a fulfilling, but light and delicious summer salad.

Mediterranean Salad -- grape tomatoes cut in half, cucumber cut into small chunks, thinly sliced red onion, pitted black and green marinated olives, crumbled feta cheese, shredded lettuce. I like a small amount of really good olive oil and white balsamic vinegar which you toss with the tomatoes, cucumber, red onion, olives and feta cheese. Then you serve it over the shredded lettuce. Paul Newman's Balsamic Vinaigrette is a good substitute as the dressing and is easier on the budget.

INGREDIENTS (Nutrition) * 1 (15.5 ounce) can French-style green beans, drained * 1 (15 ounce) can sliced potatoes, drained * 1 (10.75 ounce) can condensed cream of celery soup * 1 1/8 cups milk * 3 tablespoons French-fried onions, divided * salt and pepper to taste * garlic powder to taste * 1 (8 ounce) package dry bread stuffing m DIRECTIONS 1. Preheat the oven to 350 degrees F (175 degrees C). 2. Place the green beans and potatoes into a 2 quart casserole dish. Stir in the cream of celery soup and milk. Season with salt, pepper, and garlic powder, and stir in 1 tablespoon of the French fried onions. Sprinkle the remaining onions on top. 3. Bake for 30 minutes in the preheated oven. While the casserole is baking, prepare the stuffing according to package directions. Spread over the top of the casserole. I like to mash it flat with a spatula so that it covers the entire dish. 4. Return to the oven for about 10 minutes, or until crunchy. You can also broil for a few minutes for extra crunch.

AWWWWWWW Souvlaki, My fave... I eat it with Lamb Kabobs made on the grill or you can use Beef Kabobs as well.... ALWAYS SO GOOD.... Rice is not a suggestion for that....!!
